Brewday: Life on Saaz

Brewing this later this afternoon:
OG 1048
IBU 25
Eff 75%
MO 3.55kg
Munich 900g
Wheat 250g
Saaz 45g FWH
Saaz 15g 10 mins
Styrian Goldings 50g 80° steep
Fermenting with a 1.5 litre starter built using a bottle of Shepheard Neame 1698, using ghetto stir plate
I'm hoping for a crowd pleaser with a bit of tart fruitiness.
Its my first brew using CRS. Just christened my JBK testing kit this morning.

Cheers DaaB. Got some hefe in the fridge.
Am I right in thinking others leave IC off for 30 mins for the 80° steep? No risk of DMS?? I've chucked them in at 80 before and just left it cooling - guess thats not the right way?

All went OK, although my hops were all pellets and my hop filter clogged - I bailed it into the fv through a sieve, using a sanitised jug.
I think Del said he gets around this by putting a sheath

over the hop filter, using a hop bag?
Checked this morning and there's a big white fluffy head on it, so all cool on the yeast front, I was a bit nervous about judging if I had propagated enough.
Looking forward to this one, its had the most effort and planning I've ever made
