She's on the boil, have skimmed what I could of the hot break, and now the first hop addition has gone in.

Ended up collecting 30 litres of 1045 temperature adjusted wort, giving me 93% efficiency into the boiler.

Have a good one - you must be heading towards summer down there? Does that cause significant problems in NSW for brewing?
I'm amazed that two UK members were awake at 1am to post responses!

Impressive efficiency, Clog. I don't get near that.

I tend to avoid brewing through the middle of summer, except for my once a year attempt at a lager, as I can ferment it in my beer fridge, and also lager it in there.

To chill in summer, the ambient tap water gets me down to about 35ºC using an immersion chiller. I then route my water through a pre-chiller coil in a box packed with ice and water, and that gets me to the low 20ºC range. The fridge gets it down further overnight for pitching the next day.

I'm collecting the materials to build myself an insulated box for the fermenter, so that I can brew throughout the year. A couple of frozen 2 litre coke bottles of water changed once a day should keep the temp down nicely.
