21 Sept 2008 - Effin Imperial Russian Stout

Post by Aleman » Mon Sep 15, 2008 11:43 pm

If the weather holds hopefully Damfoose is coming over next Sunday to assist with a brew and I am planning on brewing An Effin Imperial Stout I first brewed this back in 97 and it is stupendous, an incredibly rich full flavoured beer . . . In fact I have discovered two bottles remaining so we might break into those on Sunday depending on how things go.

I think I had better get another couple of packets of Windsor to pitch into this I'm working on the theory that 1 packet per gallon should be just about enough yeast ;)

The day went exceptionally well I took loads of photos. I have to get them of my phone crop them resize and up-load them to photobucket then create a post about the day. Unfortunatley this evening I just dont have the time so it will have to wait until I am home from work tomorrow this will be worth waiting for though.

I have to say a huge thank you to Aleman for giving me the opportunity to see how a full brew goes from start to finish also for allowing me to pick his brain.

Needles to say at the end of the day Aleman has a full fermenter and their was enough left over for a demijon full for me of the blackstuff it is really black final gravity 1090.

Pics on page 2 Hope I did not break the forum they did not turn out to bad considering I used my phone to take them :)

To be honest it went incredibly smoothly, which was a surprise to me :)

FWIW I learned a couple of things today

275g of hops in (what started out as 40L) 30L of wort resembles hop soup . . . especially when the gravity is up near 1.100.

The next time it says to boil for 3 hours it actually means it . . . we cut the boil short, and I ended up with 3.5L more wort than I wanted (This is going to be a very messy ferment), as a consequence we missed the target gravity (only 1.092~ instead of 1.104) which if we had continued would have hit it spot on  )

275g of hops occupies 15L when the boiler is empty

I wish I had been able to get the web stream on line as it was a fascinating boil.

DF was responsible for all the pictures with explicit instructions to keep my footwear out of it.

Any way the wort is cooling down in the FV, and I am in the process of hydrating 44g of Nottingham yeast . . . I've also got 300ml in a jug in the kitchen with 7g of coopers yeast added to do a FFT and find out where this black beauty is going to finish

Just of to cook She a steak for being so understanding :)

I pitched the yeast (all 4 sachets ) last night at around 11:30, and this morning at 8:00 there was a good inch or so head formed . . . Neil will know just how important this is given the lack of room in my fermenter  . . . . . I must go over to Leyland and get myself a couple of 33L fermenters . . . These ones I am using I have just realised I bought in 1987

Edit

The recipe

Image

Which is a considerable variation from the original recipe in the recipes section. Unfortunately for you all he had his camera so he took all the pictures which he is going to put together in a post later tonight.

As a little teaser I pitched my yeast at 23:30 last night and at 15:00 today I got in from work to find

Image

That is a 25L FV sat in my 100L HLT . . . I've filled it with 30L of water and put an aquarium heater in the water (As a water Bath) and the white coils you can see are the feeds from the chiller . . . there is a 5m SS product coil under there somewhere

Yes you need a biger fv, and sweet Jeasus that is some hop bill, never realised how much bittering hops in stouts, and I was brought up on the stuff, well probably more draged up, any chance you would e-mail me the session file as I'd love to make the same, I got promash the other day, or is that a bit cheeky, tell me piss off if ya like and I won't be insulted. :D
