10/01/09 - getting ready for the 6Nations Italy-Wales

During our work Christmas lunch, I was pretty intoxicated (on St Austel's Tribute) and I ended up betting £50 with a Welsh mate that Italy will win this year's 6 Nations Rugby match with Wales. My £50 are as good as gone
Anyway, I decided that it would be nice to drown the sorrow of seeing Italy getting trashed by drinking copious amounts of the beer that first got me into troubles, as a tribute to my own stupidity

. So this saturday is brewday, and this should be nice and ready for the 14th March, day of the match.
23L 70%efficiency
3.7kg Maris Otter
1 kg Munich
250g T.Wheat
this should give me about 1.045 OG
Willamette (6.6%) 90 mins 13g
Fuggle (3.6%) 90 mins 20g
Willamette (6.6%) 15 mins 18g
Fuggle (3.6%) 15 mins 32g
Styrian Goldings (4.4%) at 80C 25g
This should give me about 30 IBUs
I'm going to treat the water with gypsum, as suggested by Chris,hoping that this will give me a clearer beer.
I am trying to re-culture yeast from 2 Summer Lightning bottles, but I also have S04 and Nottingham as back up. Which one would you choose in this beer?
Can you see anything obviously wrong with this recipe?

The recipe looks good. I've tried it a couple of times without much success so I'm interested to see how yours goes. I think the recipe is almost spot on and the hop schedule looks about right.
The issues I had were clearly with either sanitation (

) or old hops (

) so good luck to you - I do hope to get this brewed again some time soon.

Italy did OK in the past with Wales, especially in Rome, but I have seen Italy's autumn test matches and they didn't fill me with confidence. Giving the Pacific Islanders their first win since, well, since forever. That was pretty bad.
But then hopefully things will be better during the 6 Nations, when it really counts.
@ jonnyv: what yeast did you use in your previous attempts? I wrote an email to St.Brewery asking what strain do they use, but they didn't bother replying.

Sorry - delayed reply. From my notes I used S04.
I went for a tour of St Austell's during the summer - sadly I didn't have a sanitised pot handy to pinch a bit of yeast. Also I fear their brewery tours are a bit too commercial to ask for such things. Our tour guide clearly had nothing to do with the production of the beer, she was just there to do tours.

Mauri you are Italian then, I use to think like that not so many years back when Wales were playing, being ever so optimistic that they would win.

but I seriously doubt it will happen in my lifetime
By the way, the brewday went great. I used the Hop Back yeast and in a couple of days this beauty should be ready to bottle.

Italy at Cardiff every other year does not excite me.
I would rather have Argentina in the 6 nations.
Now that would be something to look forward to.
