Pale Old Pride

Hello,

Tomorrow I'm gonna make a London Pride clone based around the recipe a few years ago (Real Ale Almanac - thanks Norman) when they still used flaked maize. I've heard people suggest it's just pale and crystal now.
My colour won't be accurate (too light) because I'm not adding Brewers Caramel, I don't have any at the mo.
Also I've replaced the Target with Goldings because I don't want to buy a pack of that hop to use just 11g when I've no plans to use it again in the near future.

23L @ 85% efficiency, 90min mash, 90min boil, GW liquor = bitter

12.35 gm Northdown [8.50 %] (15 min) Hops 5.0 IBU
1 Pkgs English Ale (White Labs #WLP002) Yeast-Ale

Est Original Gravity: 1.047 SG
Est Final Gravity: 1.015 SG
Estimated Alcohol by Vol: 4.13 %
Bitterness: 35.0 IBU

The WLP002 starter has fermented out after 7 days, and equipment-wise I've doubled the slits in my H&G MT manifold, insulated the copper with double layer radiator heat deflector stuff and gaffer tape, and also cleaned my elements. 5th brew this year, c'mon!

Got 22L @ 1.044. If I get 70% attenuation out of the WLP-002 that'll be a 4% ABV beer. :) Wanted 1.047, oh well.

Nip down the shops and get some gravy browning, does the same job as the caramel. I use it all the time now when I need to darken a beer without adding a roasted flavour and it's cheap too. Never mind about the OG Si, it'll still be lovely :D

I wouldn't both adding anything to beer.. it's naturally it's own colour..

Dropping quite clear now. This WLP002 flocculates so readily.
Going to keg tomorrow, 'cos brewing again Monday 8)

Put this on tonight, woohoo! Fabbo. Great yeast flavour, fantastic hop level, balanced sweetness. Would definitely recommend this recipe. It's a little paler than LP but I expected that. Might try again with a darker shade of crystal if I can get it. It's magic this brewing lark 8)

Delicious Fullers, one thing I miss about living in Chiswick.

Have you read those recipes (Wheeler I think) that call for a bucket of yeast to be thrown in to the boil? I'm intent on brewing an All Grain ESB and was perhaps thinking to brew a version of London Pride first and throw the yeast cake into the boil. Anyone ever done anything similar with a Fullers beer?

I like the idea of brewing larger batches because it mean more beer...duh! Always good. Though for me I've still loads to learn about recipe building so the turnover of 5G batches lets me brew every 10 days-2 weeks, and I feel I might learn more that way (I temper my urges by convincing myself that's my opinion). Also temp controlling fermentation would be an issue as only a 5G fermentor fits in my fridge. If I bought another chest freezer I could ferment larger batches in that but I think the leader of the opposition would exercise her veto there :roll: . I have thoughts of a brick brewhouse for the future, but that's a lot of jewellry away from the green light yet.

Sounds like a good one - I have some Fullers slurry at the bottom of 5 Gall of mild - maybe I'll go for something similar to this one with it - am short of session bitter! :D
