I don't know what it is with Dunkelweizen, but every time I brew one something seems to go wrong. Last time the heating element in my boiler blew up - this time, brewday went smoothly and I put the wort into my fermenting fridge and set it for 18 deg.C and left it. Yesterday I came home from work and went to see if it was bubbling away which is when I discovered that I'd somehow managed to shut the thermostat sensor on the outside of the fridge meaning the fridge had been going full pelt all day and the wort was now a chilly 3 deg.C. Needless to say, there was not much activity in the airlock.
Anyway, leaving it out overnight seems to have warmed it back to about 18 deg. and it's finally bubbling away - I can't see that this would cause any problems so hopefully it will be OK. Now, what to name it...
