I used up some Galaxy and Rakau pellets and some NZ Cascade flowers with a pale malt grist:
Grain
5000g Maris Otter
250g Medium UK Crystal
200g Wheat Malt
Hops
Variety Alpha Amount IBU Form When
Australian Galaxy 15.0 % 11 g 20.3 Loose Pellet Hops First Wort Hopped
NZ Rakau Organic 11.5 % 5 g 6.8 Loose Pellet Hops First Wort Hopped
Australian Galaxy 15.0 % 14 g 11.5 Loose Pellet Hops 15 Min From End
NZ Rakau Organic 11.5 % 5 g 3.1 Loose Pellet Hops 15 Min From End
NZ Cascade 8.0 % 40 g 0.0 Loose Whole Hops At turn off
Yeast was US05, and my water treatment was reducing the alkalinity to about 30 with CRS, then adding a teaspoon of gypsum to each of the mash and the boil.

The grain

Mash temperature

Mash pH aftr 20 mins

Here's the first runnings

Hop pellets for the 15 minute addition and flowers for flame out.

Coming up to the boil. I just don't find pellets quite as enjoyable to brew with....I much prefer to have all the flowers floating about in the boil. Mind you, the pellets seem to make just as good a beer as the flowers.

Ready to chill...

Here's the output from the chiller

Pitched and aerated

This came out with 21.5L at 1058 !

So I added 1L of boiled water to get to 22.5L at 1055.
This should be about 40 IBU.
Right - that's the production backlog filled, so I can think about doing a lager now.
