The Admiral in this pic was drunk during clean-up, and I am now culturing the yeast for next brew, using wort from Blonde twin.
Called this Blonde Twin as it is an all pale interpretation of the Evil Twin recipe on Mr Malty. I brewed that red ale recipe for Xmas last year and it was stunning, I’ve had this in mind for a while.
Secondly, I am trying an oak aged beer:

100gm Light toasted American Oak chip.
S-04 Yeast
Been supping a few Innes & Gunn recently, and had to give this a go. Used Challenger as supposedly the best substitute for Pheonix, which I&G reportedly use. Total guess at IBU, didn’t want too much as it might kill the oak flavour! Grain, I just went for a colour between the original and blonde I&G. I fancied the caramalt as I had it and it should help with a sweet maltiness to carry the vanilla from the oak from past experience with it. Still not decided how to play the oak. Recalling some posts I read backalong, I’m considering soaking the chips in whiskey. Other option is to boil them briefly and add them with the boil water (if it colours). Love to hear any thoughts. I’ll put the chips in a hop bag in the corny till I get the flavour I want then, probably, bottle it from the keg.
The Brewday:
Due to lack of brewing opportunities, I have been doing simultaneous/ double brew days since early this year. This is my third dual brew. I use a 10gal HLT to feed 2 cheapo cool boxes for mashing. Also got 2 boilers, so I basically split everything to 2x 23-25l after the HLT. I boil enough water for the 2 mashes, then top up the HLT to cover the remainder of the 2 brewlengths and heat it while it’s all mashing. I fly sparge one (float the bed), and break the flow, as required, to batch sparge the second. Seems to work out quite well. Might try and split the sparge feed one day, and could always do 2 batch sparges, but this works well for now.

Both MT’s hit 66 degC, so went with that, and neither budged at all over 90 mins (usually lose 1-2 deg). I have stuffed a layer of camping mat in all sides of those cheap cool boxes – works a treat.


The Amarillo and Centennial for Blonde Twin are pellet, so got the stocking installed on my hop strainer in Boiler 1. Challenger are flower, so standard strainer in Boiler 2 for OAP. The hosiery does slow the run-off quite a bit!

Pretty happy to see this looking so clear.
Now to get the 2 boil volumes (Golden shower anyone?)

I don't worry about aerating the hot wort, done it with tubing and there seems to be no difference?
Got a bit hectic after run off, some people think they can use the kitchen for cooking and stuff, so not many pics taken! Also, once the boilers are full, I cart one up to the shed for boiling and stick the other by the back door to keep the steam down. Keeps them on a different ring as well. I normally only heat the burco during run-off, this gives a staggered boil start time and allows me time to cool one brew before the end of boil for the next. Only got one IC!

I took pictures of the hydrometer readings for the brews, but they are rubbish on account of not being focussed. Have to trust me that the Blonde Twin wort was a super clear wort of 1049 deg (26L). OAP ended up 1065, 22L. Limited volume on OAP due to the amount of grain required in my small cool boxes.
Both are fermenting nicely. Blonde twin has spewed a yeast cake all over the inside of the temp controlled fridge and smells fantastic. OAP is chugging along, got it in a bucket of water to make sure the temp stays down.
