Suedehead Pale Ale

Girlfriends away. Mate is arriving late Friday. Nowt to do but plan a brew.

Want to brew a med/low alcohol hop bomb for the corny and 10x500ml bottles. So heres the potential recipe:

Grain:
Pale Malt (Marris otter) 4500 grams

Hops:
Boadicea Whole 15g unknown%AA 90 mins
Cascade Whole 20g 7.5%AA 90 mins
Aurora Whole 15g 8.1%AA 90 mins
Cascade Whole 30g 7.5%AA 15 mins
Boadicea Whole 20g unknown%AA 15 mins
Cascade Whole 10g 7.5% dry hopped in secondary

Could be very hoppy depending on how the boadicea behave. I am estimating around 5% going by BB AAs!

Final Volume: 25 Litres
Original Gravity: 1.043
Final Gravity: 1.010
Alcohol Content: 4.3% ABV
Total Liquor: 36.2 Litres
Mash Liquor: 11.2 Litres
Mash Efficiency: 80 %
Bitterness: 55 EBU
Colour: 7 EBC

Yeast: S05 or Nottingham (what do you reckon?)


Water altered with GWs calc to emulate a dry pale ale. Every 20L - CRS 14ml, Gypsum 5.4g, Calcium Chloride 3.3g, Epsom Salts 0.6g

Off to prep, should be good.

Looks good - have fun with it.

My only comment would be to maybe move the Cascade out of the 90 min slot and replace with one of the others. I've found that using Cascade as a bittering hop is a bit of a waste of them really. They're so nice for flavour and aroma (in a kind of Marmite love 'em or hate 'em way) that you might as well save them for that. Your mileage may vary.

HOP BOMB, like the Idea, MO and hops, I never had a bad HOPS and 5KG of MO.

Good luck, can't assist as I don't know that set of hops as a group, but will look right now.

how can you go wrong.

Good call ali, I was sort of hedging my bets. Time for a tinker with schedule.

Yep misty, morrissey fan, although alot of my ales names come courtesy of itunes on random. I could pretend that its called suedehead because it sounds like hophead. But the truth is I was gonna call it morrissey's pale ale, but I think I would have got a different reaction from anyone glancing at the name.

Revised Hops
Boadicea Whole 5%AA 90 mins 25 grams
Aurora Whole 8.1 %AA 90 mins 25 grams
Cascade Whole 7.5 %AA 15 mins 50 grams
Boadicea Whole 5 %AA 15 mins 20 grams

Gives me an IBU of around 60, which is around the figure I am looking for, even though its only a 1043 OG. I won't be first wort hopping either.

Secondary/Dry Hops
Cascade Whole 7.5 % 10 grams
Golding Whole 5.7 % 5 grams

Am I right in thinking there is no point in a 80C steep if your dry hopping too?

Mash on! 0740. Strike temp has a tad high at 67C... few splashes of water and we're back to 66C. Huzzar. Couldn't find my decent camera, so mobile on high def... hence pics are a bit blurry.

Another blur fest. About pH 5.4 Took it a bit early in the mash time so hopefully it will drop a few units. I think I'll get some new pH papers measuring the high side of the range considering my water is very alkali.

All tucked up now. Not bothered if it drops a few degrees, as I don't mind it being a bit on the dry side. I think this will be a S05 brew so it should be a lip puckerer.

Job done. FG 1048, but only got 22L so that makes sense. But a bit short on filling my bottles to! Easy brew day, starting to find the cleaning and waste disposal the hardest part of the day. Think this will be a good one.

Hops... Left the protofloc, big cascades and boedecia. Right Aurora and Boedecia.... accidently chucked some saaz in there to. I must remember to mark up the bags.

Windy day, so it was done in the brick shed. It worked well, added improvised wind shield and dog blocker.

Pitched the yeast in to the wort at 27C and stuck it in the fridge at 18C. Thats were it will stay until a few days in to he fermentation.

Just to see, just to see, all the things that you've written about me.

It's going great guns now. Day one the yeast head touched the lid. Its much more active than my last brew with S05. I think its going to be my staple yeast for bitters and pale ales.
Its out of the 18C fridge now. The ambient temp in the house is 20C so shouldn't be too bad. The smell of cascades is amazing. Looking forward to getting this in to a glass.

This is nice. Probably would lessen the orignal bitterness. It is winey bitter, citrusy tasting and has a late biscuity malty taste..... In fact I'll just check....

Arrrghh! All gone! Really enjoyed this. Think I could have toned down the IBUs from the 90minute addition.

Already prepared the recipe for Suedehead Pale Ale 2!
