Belgian White Beer Brew Day with Pics

My first go at one of these beers and the smell is driving me bonkers already.

Here's the recipe; typical 50/50

23l Length
2.552kg wheat malt
2.552kg Munich malt
35g of hallertau @3.0aa
10g of corriander seeds
10g of curacao peel
Wlp300 yeast

12.8 ebc, 10.8 ibu, 5.1 abv

The mash is on (30min in) so I thought I'd start the post off

This is my first attempt at a posh yeast & starter, but it seems to be bubbling away alright; should maybe have got it going on Thursday night but there you go.

I roasted the corriander as suggested by ADM then crushed it to join the curacao for the 10 min addition

The dog didn't seem to bother about the tablet, he's ate worse! :)
I'm quite surprised how dark it came out considering it supposed to be a Wit...

Anyway, it smells great, really looking forward to this baby.

For a lighter wit I would stick to non malted wheat and a lager/pilsner malt. Looks tasty though.

Staffies have the consitution of an Ox. I recall mine popping and eating all the balloons at Christmas and having multi coloured craps for the next 2 days.

Nice pics. I'm hoping to get a Wit on and didnt know the insider knowledge like roasting the coriander seeds etc.

Looks like you had a good brew day there Rick, hope it turns out good for you,
I`ve just bottled my Hop Stock and Two Firkin Barrels today and it tasted, well, different.
cant wait til its conditioned so i can see if all those mixed hops worked or not, dont worry bud
i`ll save you a couple :D

I've lost about 2lt through the blow off tube, must have been a vigorous fermentation!

Any recommendations on a secondary ferm temp guys?
