My first go at one of these beers and the smell is driving me bonkers already.
Here's the recipe; typical 50/50
23l Length
2.552kg wheat malt
2.552kg Munich malt
35g of hallertau @3.0aa
10g of corriander seeds
10g of curacao peel
Wlp300 yeast
12.8 ebc, 10.8 ibu, 5.1 abv
The mash is on (30min in) so I thought I'd start the post off
This is my first attempt at a posh yeast & starter, but it seems to be bubbling away alright; should maybe have got it going on Thursday night but there you go.
Water treatment
I roasted the corriander as suggested by ADM then crushed it to join the curacao for the 10 min addition
Grist
My glamorous brewery assistant; who snaffled my protofloc tab!
Goodies good to go
Mash on

Corriader, curacao, protofloc and chiller added at 15mins to go.
Flame out, chiller on at 90mins
20 mins to mid 20's
First recirc
Transfer
Target SG 1052, actual 1052
Aeriated
Yeast pitched
Into the fermenting room
Tucked up in bed for 10 days
Hops and very little trub...dunno if the corriander had something to do with that or not; shouldn't matter about chill haize to much in a white beer anyway, LOL
A smooth day and good fun reporting it too, hope you enjoyed

The dog didn't seem to bother about the tablet, he's ate worse!

I'm quite surprised how dark it came out considering it supposed to be a Wit...
Anyway, it smells great, really looking forward to this baby.
Thanks for all the advice again guys, most appreciated as usual.
Cheers
Rick

For a lighter wit I would stick to non malted wheat and a lager/pilsner malt. Looks tasty though.

Staffies have the consitution of an Ox. I recall mine popping and eating all the balloons at Christmas and having multi coloured craps for the next 2 days.
Nice pics. I'm hoping to get a Wit on and didnt know the insider knowledge like roasting the coriander seeds etc.

I've lost about 2lt through the blow off tube, must have been a vigorous fermentation!
Any recommendations on a secondary ferm temp guys?
