Buster winter warmer.

Ok so i write this from my mobile at 1 am c e t. I get up to drive in 4 hours.
The recipe was something like.:-
4400g pale
200g light crystal
150 g torri wheat
30 G black.
15 g north down for 60
15 g challenger for 60
12 g challenger for 15
22g styrian goldings for 10
1 pack nottingham.
this was based on 70 percent and should have given of a pre boil og of 1058. I got 1069:-)all looks well so far. Was aiming cv 15 k in all. Endede up with 18.5 k cv 1065. Anyone want vm work out the efficiency for of. Looks like around the 80 olsl i vigio

This is starting so smell great. Fruit, banana, pine, just amazing. The initial fermentation went like a rocket, the air lock got almost emptied for water and the yeast head was again up under the lid of the f v.
The colour is lighter than i wanted, should have had more black in, not much to do about this though.
Right now it's not s bitter as i wanted either. I åm debating as vm whether i should dry hop with some north down. Thoughts?

I must admit that originally i had BOBEk instead of styrians.
I was advised to use styrians instead.
Is there anythin i can do to darke this brew at this late stage?

Iust took a sample to check gravity.
We are down to 1014 from 1065.
Although no where near as manic as yesterday the airlock is still going around every 15 secons. I am hoping for this to drop to 1010.
The taster i had is indeed bitter yet also has a nice twang to it. this must be the styrians.
You can already feel the alcoholic afterburn as well. The ample has a lot of fizz still going oon so i am very optimistic that this will be as expected. just a shame it is not as dark as i wanted.

Well this is now down to 1011 maybe 1010 so its pretty much done. Am going to add 25 grams stryians for the next 5-10 days as dry hopping.
this is a rathr hefty tipple though at 7.2 nice afterburn but also the taste of the hops comes through. Think i might just use nottingham again. very hapy with ths one.

Boil up some treacle and add it to the fermenter.

I thought aout that but to be onest at 7.2 percent i am not sure i want to add more sugar to it:)

Was indeed my first thought. But i do not have any so i guess i'll have to add that to my shopping list and leave this one slightly paler than a traditional christmas beer. tha being said this is hardly a traditional NORWEGIAN christmas beer, it tastes nice, is pleasent smelling and is not going to be fizzy as heck. Neither do i have to pay 8 quid for a half liter botle in the shops due to it being over 4.7%:twisted:
