Howard's Old Ale

Hello,

I popped into Harvey's Brewery in Lewes yesterday where brewer #2 extremely kindly gave me 2 x 2oz pots of their yeast in sterile containers :D I'm putting one of them into my attempted clone of their Old Ale, less the burnt sugar/caramel tweak they add. He also gave me some 400EBC crystal which is body of the grain bill :D Undecided what to make with the 2nd yeast pot, but have EKG's, Fuggles, and Challenger in the freezer. Grain in the store is 120EBC Crystal, 400EBC Crystal, Munich, Amber, Brown, Chocolate, Black. Too many options!

Ingredients
23L @ 70% efficiency, 90min mash @ 66°C, 90min boil, 1 week primary, 6 weeks conditioning at cellar temp, liquor = Porter

3.61 kg Maris Otter (5.9 EBC) Grain 85.00 %
0.64 kg Caramel/Crystal Malt -250L (400.0 EBC) Grain 15.00 %
45.00 gm Fuggles [4.50 %] (90 min) Hops 22.8 IBU
10.00 gm Goldings, East Kent [4.60 %] (15 min) Hops 2.4 IBU
1 Pkgs Harvey's Yeast-Ale

Boil on and this doesn't half look light in colour. Going to end up copper at this rate! Might have to rename it a mild.

Looks like a nice recipe nad luckly score with the yeast

I would not be surprised if they where adding Carmel in the boil to darken it up

Poor Carmel, people keeping wanting to boil her :lol: Sorry Ob, just messing. Yeah I guess the caramel plays a real part in this, the brewer did say the burnt sugar flavour of the product they use does contribute a little in the flavour. Still it's not to be in my one. I'm tempted to try a couple of tbsp's of treacle in the next brew using the same grain bill, then again I'm tempted to use the 2nd Harvey's yeast pot for all sorts of brews :roll:

In the FV at 16.7°C (it's cold out) and controller set to 19°C...just like the brewery :wink: I'll give this a good stir tonight when it's reached temp. I left about 7 litres headspace in the FV 'cos last time I used this yeast 5 litres space wasn't enough, it's a top working yeast and it got messy :lol:

You're really working your local brewery connections at the moment Si :D

Propagate and split that second pot and you could brew the whole gamut of Harveys' range. Hmm Harveys (he says with a Homer Simpson like drool).

Yeast has monstered this wort. It'll end up more like an ordinary bitter at this rate, nothing wrong in that at all, just won't be anything like I intended :lol:

is that like a little Spreadsheet you use to track that?
I'm not one for taking loads of Hydro samples but I suppose it would be interesting to try at some point :)
