Bored out my tiny mind Hefe weissen

On my tod in the house today. Bored beyond belief and can't think of anything i really want to do, Checked the fridge and i've got a tube of WLP300 thats past its sell by date so its 5 gallon hefe today using my old FV with a pack of danstar munich as back up!

Something like this....

Ingredients
Amount Item Type % or IBU
3.00 kg Pale Malt (2 Row) UK (3.0 SRM) Grain 50.00 %
2.00 kg Vienna Malt (3.5 SRM) Grain 33.33 %
1.00 kg Munich Malt (9.0 SRM) Grain 16.67 %
0.50 oz Cascade [6.50 %] (90 min) Hops 12.0 IBU
2.00 oz Hallertauer Hersbrucker [4.00 %] (1 min) Hops 1.2 IBU

Edit 13.30hrs
Quite enjoying just throwing this together instead of obsessing about it, liberating!

1/4 kg of torrified went in and a 1/2 kg of wheat malt. As i said throwing it together....

Edit turned out to be a KG of wheat malt


The pale choclate malt is looking at me saying go on go on it'll be different!

Ah! I think you need the wheat to get the precursors of all the lovely yeast flavours. Great yeast 8)

Cheers Graeme, i've not made a wheat beer for a while, think i used to do around 50% of the grist wheat. Recipe turned out like this so far.

3.00 kg Pale Malt (2 Row) UK (3.0 SRM) Grain 41.38 %
2.00 kg Vienna Malt (3.5 SRM) Grain 27.59 %
1.00 kg Munich Malt (9.0 SRM) Grain 13.79 %
1.00 kg Wheat Malt, Ger (2.0 SRM) Grain 13.79 %
0.25 kg Wheat, Torrified (1.7 SRM) Grain 3.45 %
0.50 oz Cascade [6.50 %] (90 min) Hops 10.9 IBU
2.00 oz Hallertauer Hersbrucker [4.00 %] (1 min) Hops 1.1 IBU

Mash is on and i'm sitting at the pc about 15 mtrs away from the garage. Malty smell wafting through to me here as i sit. Cranking up Genesis 'Mama', wife and weans ooot doing other stuff. Not a bad way to spend a sat afternoon. Going to play with my mash temps today see if i can up the efficiency a bit.

All done, ended up with around 6 to 6&1/2 gallon at 1.048. The WLP300 that i found in the fridge which kickstarted this is dead as a parrot. Instead i used Danstar Munich dry yeast, not used it before so iterested to hear if any of you guys have and what you think of it?

Had to go fast and dirty so to speak at the end as real life intruded :roll: End result being far too much break material making it through.

Nonetheless i had a pleasant afternoon and it was good to get my old FV out again.

Do you Protafloc or not in a Hefe Weissen?

I did use a protafloc but i had to cut the boil short so it only had about 60 minute boil and the protafloc got about 8 minutes not the usual 15. Settle and chill was an hour though. Just been out to the garage and got alien sculptures in the 1 gallon fv. looks ace but can't quite catch the magnificence of it on camera. Great, its like being back in science class! I know this isn't the correct attitude but why not its only a gallon? The main FV is clear looking. Anyone wants to chip in ideas please go ahead.

Sussed it, this is the yeast colony forming and rising up to the top of the fermenter. Really pronounced floating mat of yeast in both FV's this morning then the krausen forms on top of it. Glad i did this one in glass to see this process.

Looks good. How long did you give the WLP300 to get going in the starter? If it's near the end of the date or past it, it can take a couple of days i've found. I'm sure it will be delicious with the Danstar anyway.

I've got some WLP300 in the fridge, hoping to get a Hefe on at the start of April for serving at the Glasgow thing.
