13th Brew on the 13th day
Hmmm coz of the date I wasnt too happy, Im a little superstitious! But I still got on with it...
Not sure its got a name yet, Im not really into naming beers until Ive tried it....
3.5kg Halcyon pale malt
250g Torrified Wheat
300g Crystal Wheat
Challenger 7.1% for 90 mins - 35g
Cascade 7.6% 30 mins @ 80C steep (going to do this all the time now!)

Its my first time using a live yeast and man has it gone off like a rocket. I got the starter going on Weds and it didnt really look like it was doing much until Sat! So I thought sod it I shall still throw it in, I coudl always use some Nottingham if I need to.
No chance! Have a look at the last two photos....
Im really excited to see how different the taste is compared to the 'clinical' taste of Nottingham....

Couple of questions...
How did the wind turbines work ?
No flavour hops? I did one recently with no main bittering hops, but I still cling to the idea that something at 10-15 minutes makes sense..... I'll be interested to see what you think when this is ready to drink...

Was that 30 grams for an 80C steep?
Great stuff, Cal Ale is pretty neutral and lets the hops shine. Nice yeast.

Yup it was indeed 30/35g for the 80C steep, Ive just done it for the first time with the Bishops Farewell clone and the results are great, a lovely citrus twang aftertaste!
The twin sparge arms are great! Yes slightly overindulgent but hey why not! Put it this way by the looks of the yeast monster they seem to have done the job of washing all the sugars out! It was a little bit weird to get used to after batch sparging and hell it was a lot less faffing around with jugs and foil. Time was a bit quicker too as I didnt have to wait for the second sparge, it was all done in one go.
I took samples every few minutes and I think the last gravity reading I took before I realised I had collected the full 29 lts (boiler max) was about 1015. I didnt cool the wort down but used a temp correction instead thanks to Mr Flack! God bless the iPhone!
Anyway I was a little worried I hadnt got all the sugars out but when it finally went into FV for once I hit the gravity bang on spec @ 1039 x 23 lts. I take it this means my efficiency was at 75%, as I think thats what was in Beer Engine.
I think I will just have to see how I get on as I am sure I have had efficiency of up to 85% before, Im not ditching the arms yet but I know people have posted on here saying that their efficiency dropped when they swapped to fly sparging....we'll see.
WLP001 what a monster! I had a 500ml bottle with some in from a friend and then grew that up in 4 lts to split into 8 300ml bottles. I was a bit worried at first as I have never done this before and the amount of yeast on the bottom of the final 300ml bottles was sparse. I started the starter last Weds night and it didnt really show many signs of life until Thurs PM, even then it was little islands of activity.
Come Sat I thought sod it and chucked it in, came down Sunday to be greeted by a naughty FV with its lid wide open and something trying to crawl out! I had to keep shutting the lid all day yesterday every 30 mins!
Anyone got any tips on this one, I suppose its infection Im worried about more than anything...

just dont push the yeast back in and you wont get any infection

Further to the monster trying to escape from my FV, it has slowed up a bit now and has stopped trying to push the lid off!
I was just wondering what people did to minimise infection once your carpet has been covered in cavity insulation!

This has now dropped to 1018 from Sat - Tuesday night. Fingers crossed it doesnt stop, Im looking for 1009.
