Stunning Styrian - Big Bertha's shiny day out.....
decided to go for it - big bertha (100l) has her tap fitted, gas purchased from the local Calor outlet..... this is what I thought I'd try - variation on the Styrian stunner - I am going to bottle this using T58

Well I didnt get time to take pictures of everything and my whole schedule went out of the window - its amazing how having a new piece of kit really throws you. We had a family party going on indoors, so I think I am in the dog house too - I think i only came in for 10 mins and then scuttled back off to the shed chomping on quiche as I went.....
Sorry didnt photograph the mash, though temps were around 65.8 after a little adjustment upwards. Forgot to measure the mash ph as well...
New shiny is too big to fit under the mash tun, so had to cobble something together. then of course I realised I havent got a way of measuring the volume in the shiny (havent fitted any kind of sight tube like the clever folks on here, so I just pushed 20litres through - checked the OG as I went, was ok, around 1012 at last runnings
Must say 30litres in this beast looks tiny, in fact my cooling coils dont even sit fully below the liquid and its impossible in to see the liquid cleary as it boils because of all the steam - so currently I am 50mins into a 90 min boil and completely out of control!! anything could be happening, I might end up with 25 pints or I might have 50.

Lest we forgot for what we toil.... a few of these have kept me lubricated during the brewing session. This is Wherry III with chinook as the finishing hop and also as a dry hop in the barrel - It is my favourite of the three I have done so far, though I will be doing Wherry Ray's 'recipe' very soon. Probably have to wait till after the move to Norfolk......

Thanks Guys, bit of a nightmare brew - forgot the protofloc, I'll drop it after a couple of days once the trub has settled out and ferment is strong.
Ended up with 20 litres
so I wanted to put more water on to top up, but I keep having problems with my in-line filter popping off, got water in the electrics and blew the fuses 4 times whenever I plugged the element in- you can imagine how that went down with swsbo
Ended up throwing 10litres onto the hops and heating that up in the shiny.... have come in now to leave to cool and settle, then I'll run off the last 5 or 6 litres to top up the brew - At 20 litres and 26c the Og was around 1055, so I dont think I am far off the 75% planned efficiency of the recipe..... but oh boy that was hard work - Once i've moved I'll have a garage and I think I'll have to invest in a pumped system, big shiny's are too well.....big to lug about with hot fluids in....
I'll be interested to see how t58 works with this brew - its supposed to be quite a spicy number, and good for bottling.

I think it will come into its own once I start brewing 50litre batches - will be seeking the panel's advice re pumping options once I get to that point....
Anyhow all is looking good this morning - 4 inch Krausen - fair amount of trub thrown up which doesnt surprise me given the fact I forgot to add copper finings. I must say that T58 is a lively begger - its giving off a wonderful smell - not suplherous that I'd notice and is bubbling through every 3 or 4 seconds!!
I just hope it will turn out well and clears later - I wanted to drop it, but will be away all week, will it still be ok to drop it to another vessel next saturday do you think? - wanted to get it off the trub

Yeah, I usually make up the mash volume first and then top up again to 20l for the sparge. The dosing rate I use is 30ml for 25litres based on 279ppm from the thames water report - yes I know its high and that they quote hardness and not alkilinity - but as we discussed in another thread, the values *may* be the same where water has predominantly carbonates - i.e. lower permanent hardness. I'm assuming that is the case for me as I put a picture up one time from my mash and the colour was spot on 5.3 based on these dosing rates.
