Fools Gold 2nd AG brew - Captured yeast (TT LL)

You probably think I'm a fool, those who know me would say I'm an idiot. This is a brew that came round by chance in reality owing to BB being out of stock of MO malt so I ordered GP, then the Railway Pub got a barrel of Tim Taylors Landlord on!

Again not being one to do the sensible thing, I've chanced my arm with the following;

Malt

Golden Promise 4100g
Crystal 150g
Amber 150g
Flaked Barley 150g

Water
32 L treated with CRS and Burton water crystals + 1 Camden tblt

Hops

Frist Gold 6.2% 50g 80mins
Chinook 12.7% 10g 60mins
First Gold 6.2% 10g 15mins with Irish Moss

Yeast
Pub captured TT Landlord started 3 days ago fizzing in bottle.

Now its all in the FV having been pitched at 24C and a length of 24L with OG 1046 :mrgreen:

I have managed to keep 1L of pre-boil for my next starter and lost another litre in Mash and another in the trub. I'll add some pics soon! I don't believe this will be particularly similar to LL but I'm really looking to improve flavour by using captured yeasts, fingers crossed.

Looks pretty good. How did you collect the yeast from the pub?

Mmmm, yeast! Its going mental in the FV Big foaming head, which is pretty damned thick. To be honest I'm a bit worried about it as I have no experience with captured yeast cultures.

I simply took a sanitised (boiled) jar over the pub when the barrel had finished and went down to the basement with the landlord to shake the barrel and pour slurry straight into jar. I put this in the fridge for a couple of days before i was ready to make the starter. Job done, I hope.

Sounds like you may have over pitched.

How's it tasting? If it doesn't taste 'off' then you could be home and dry! :D :D

Yeah, I'm thinking the over pitch is an almost dead cert. There is still a large creamy head of yeast (which is as thick as whipped cream!) I've had to swap the airlock three times as its been bunged up (only a 2" gap to the brew, which has been virtually filled with the yeast head).
I'm unable to taste at the moment due to a stinking cold.

Has anyone experience with over pitching? - Should I leave it in the FV for longer so the yeast can fall away?

I would. Shouldn't last too much longer.

All setteld down now, after 11 days in the FV. Looks like it worked out ok and achieved a FG of 1012 so that's 4.9% ABV. I've split the batch with half bottled and half pressure keg!
Just got to keep busy with another brew and not look at it

I didn't really give it a proper go, but what came through the siphon pipe seemed good. I want to condition it for a month before I give my flavour satisfaction report!

Just a quick update to say that this has had a couple of weeks to mature and i was hoping that it would have settled out nice and clear, but no still rather cloudy. Also I'm rather disappointed with the hops flavour. First Gold hops have come out very mild! I did expect more of a punch, alas no.

On the upside, I'm happy with the performance of the yeast and will look to develop another brew with it!

Glad to hear the yeast worked well! :D

If you want a real First Gold punch, I'd go for 40g at the last 10 minutes. You could also steep around 20g after this.

If it is still cloudy in the pressure keg, perhaps you could stir in some gelatine? Not sure if this will be OK at this late stage. Perhaps someone else might like to comment?
