Do you know, i can't get this IPA in Aberdeen! I was wanting to taste it and more impotantly culture the yeast from the bottle for my next IPA. Any chance of one of you guys buying me a couple of bottles in England and posting it up? I'll paypal you the required amount, honest!

Some interesting stuff there. Especially how they put brew after brew into the same FV.

yes good watch that same here was weird how they store bew on top of brew?
its mad to think the actual process is nearly the same as you do in the house just small scale. all them hops he wasted on the bin lol

I liked the brew blending idea to keep consistent. Also liked their exposed to atmosphere wort chiller aerator. We are way more obsessed with microbes! But then you see them boiling a copper full of water to sterilise it....

thats a good video, we need a program on the discovery channel would be good to watch,he must of had a good £10 worth of hops there

If they're putting unfermented wort into the fermenter then it must drop to the bottom as it's "heavier" in having unfermented sugars in it. If they draw off from the bottom of the FV then they'd have unfermented or partially fermented wort. Then again, they have 28 days secondary in the bottle so it must ferment out in the bottle.

Excellent videos. I'm surprised they blend the beer, but it obviously works well as the bottled White Shield is a lovely beer.

I had a pint of it at the Brewing Museum at Burton a few years ago. I also bought a bottle to take away, I would have bought more but the robbers were charging £3 a bottle.

Try Morrisons, it's recently been listed there. £1.89 a bottle.
I use White Shield yeast for all my ales now. I don't know whether it's the primary fermentation yeast or not. Maybe they have changed it since Protz wrote his article? Or maybe it always was — Protz is known for not bothering to check his facts which is why he's not a reliable source on anything much. At any rate it's a great yeast, certainly worth a try. It's a real top-fermenter so forms a lovely thick buttery layer of yeast on top for easy harvesting.

Thanks Robbie i've just did as you said and there is now one bottle of Whiteshield on the shelf of my morrisons beside its new beer label. Ten are with me and the other one is with an old guy who now knows considerably more about IPA's than he did when he got up this morning! I'm going to try it against my damn the expense tonight and get the first of the yeast. The bottle says its dual strain so what does old Rogdge know eh? Jeesoh and Sheesh!
Robbie i bought a mint and spearmint plant after trying your mint beer at the glasgow thang. Did you say 100grmms per 5 gallon batch? Bit pished by then so can't quite remember.

Tried and very much enjoyed the whiteshield IPA. If anything its just a shade too sweet for me, decent balanced beer all the same and a pleasant surprise. Still rubbish compared to my own IPA's but i would say that and mean it wouldn't i?

I only did about 15 litres so perhaps up the mint to 120g or so for 5 gallons. 120g is quite a big bunch of fresh mint so buy it from a Middle Eastern grocers or grow your own. I'm also going to try chucking some Polos into the boil next time.

Checked my harvesting bottle this morning and have a small amount of yeast from the 2 bottles we had last night. It will have to wait a while before i can grow it as i'm off to Norway for a bit tomorrow. Looking forward to the next huge IPA though and with luck this yeast will lend itself well to that project!
