M'Dear IPA

Post by befuggled » Thu Jun 03, 2010 9:07 am

As my "Serious IPA" will not be ready until next April/May, I wanted something fairly serious ready for late autumn/winter - maybe starting bonfire night :flip: .
Up until now, I have concentrated mainly of different hops. Now I want to try more of the "speciality" grains. The biscuit would not have been used in an original IPA, nor would the Munich or Maize, possibly not even the wheat. The overall effect may well be too cloying, but seeing some other member's grain bills  , I am going to give it a try.
So with a hazy vision of a crusty old be-monocled Colonel of the Raj, addressing his good Lady over a glass of recently docked beer...
Mashing as I type:

M'Dear IPA

Pale Malt 5 EBC 7500 grams 69.8%
Munich Malt 20 EBC 1000 grams 9.3%
Biscuit Malt 50 EBC 500 grams 4.7%
Wheat Malt 3.5 EBC 1000 grams 9.3%
Flaked Maize 0 EBC 750 grams 7%

Whitbread Golding Whole 5.6 % 90 mins 0 lbs. 3.5 oz 100 grams 20.4%
Golding Whole 6 % 30 mins 0 lbs. 3.5 oz 100 grams 20.4%
Styrian Goldings Whole 3.5 % 15 mins 0 lbs. 3.5 oz 100 grams 20.4%
Whitbread Golding Whole 5.6 % 15 mins 0 lbs. 1.2 oz 35 grams 7.1%
Golding Whole 6 % 5 mins 0 lbs. 1.8 oz 50 grams 10.2%
Styrian Goldings Whole 4.5 % 5 mins 0 lbs. 2.6 oz 75 grams 15.3%
Bramling Cross Whole 5.7 % 0 mins 0 lbs. 1.1 oz 30 grams 6.1%

Final Volume: 27 Litres
Original Gravity: 1.090
Final Gravity: 1.021
Alcohol Content: 9.1% ABV
Total Liquor: 44.5 Litres
Mash Liquor: 26.9 Litres
Mash Efficiency: 75 %
Bitterness: 87.7 EBU
Colour: 24 EBC

The hops are scaled to use up several full and part full bags so that I can order some more from Rob in the reasonably near future - that's why there is only 30gms of Bramling :( .
If anyone has any suggestions on the schedule, it's not too late yet!
Future IPA names reserved are: Blighty, Chukka, Cushy, Dhobey, Goolies, Doolally, Memsahib.

I'm rapidly coming to the conclusion that any hop addition pre flame out is pointless on a hop forward beer. Stick it all in after flame out and leave to steep for 20 mins as it cools ... that's what I say.

That and it needs more US hops! :P

Mr Chunk,
My first impression was that you had to be one of those infernal rebellious bounders who had the audacity to chuck all our tea into the ocean in a far off port.
A quick look at your link indicates that you do, at least currently, reside in a civilised country. (Will look at the rest of it later!)
Our own Field Marshal, the Rt. Hon. Badger might not agree with your suggestion for more yankee hops, but to prove my (limited) tolerance of things foreign, this is planned for tomorrow:

Lager Malt 2.5 EBC 7000 grams 87.5%
Caramunch 90 EBC 500 grams 6.3%
Crystal Wheat Malt 125 EBC 250 grams 3.1%
Wheat Malt 3.5 EBC 250 grams 3.1%

Pacific Gem Whole 14.6 % 30 mins 0 lbs. 1.8 oz 50 grams 23.8%
Perle Whole 8.15 % 10 mins 0 lbs. 2.6 oz 75 grams 35.7%
Nelson Sauvin Whole 11.3 % 10 mins 0 lbs. 2.5 oz 70 grams 33.3%
Chinook Whole 11.5 % 0 mins 0 lbs. 0.5 oz 15 grams 7.1%

Final Volume: 27 Litres
Original Gravity: 1.066
Final Gravity: 1.016
Alcohol Content: 6.5% ABV
Bitterness: 79 EBU
Colour: 26 EBC

I also shamefully admit that I have recently brewed with:
All Chinook, All Simcoe, All Amarillo, Columbus/Cascade and Proper Job which is all yankee..... sorry Mr B.

The M'Dear will probably get 50 gms Goldings, but Liberty sounds good for the (now christened) Doolally IPA!
I will PM you later...
Cornies - I can barely get in the garage for all the sexually active and rapidly multiplying little perverts.....

( :!: :-k Thinks - I really ought to sell off some of the offspring... :---) )

A combination of Chinook and Nelson is an interesting one. Not 100% sure I'd be a fan but I guess you're not brewing for me, so that shouldnt be a problem*. :P

I'm Kentish through and through by the way. My love for hops is not constrained by geographical location ... I love them all, but if you're making a modern IPA the only way to go is US of A.

Thanks for checking out my blog. Would love to hear what you think, good and/or bad.

* If you are brewing for me, something is going wrong with the delivery - I havent recieved any of the beer you've sent me!!! :P

Well, the Gem and the Perle are supposed to have berry characteristics, the Nelson grape, so I thought a little grapefruit on the end could give a nice fruit cocktail!

I have not had time to read it all, but will do once today's brew has been put to bed....initial impression is interesting and amusing

As for the delivery, I can't understand it! I'm sure I've got the consignment number here somewhere, but then the DHL driver did seem a bit wobbly the other day  ..... I'll check on it when I finish brewing (forever) or am dead, whichever happens first!

On the other hand, if the Doolally comes out as you suspect, I could send that down for a second opinion!

I see the thought process. I get more mango, kiwi, gooseberry etc from Gem and Nelson ... be interested to see how it turns out.
