White Star IPA

Post by pantsmachine » Sun Jun 13, 2010 12:10 pm

Had a good time at a bbq yesterday, swmbo and daughter are out shopping today so decided to get a brew on. Today i am going for another IPA, couple of differences. I am going to first hop this beer and i have slid a whole load of the hops to the last 5 minutes or so. Hoping some of the bobek citrus survive as well to come through in the final beer. I might up the ABV on this beer to around the 7% mark, not decided yet. GAME ON!

Excellent looking recipe - it's a Hop Monster!

I don't know if you've come across this reference chart (or anything similar) but your IBU/OG ratio is right on the margins...
Image

I'd say stick at it - look forward to notes on the progress and your initial tastings. I'm particularly enamoured with the orange peel/honey!

Cheers mate,

Much appreciated. I try not to pay too much attention to brew guidelines(within limits of course) and hopefully i achieve the kind of beer i'm after!

Lost a degree and a bit on the 1 hour rest. That will do me nicely.

The smell of the first runnings hitting the hops is sensational.

Sparge on and some dark high sugar recirced first runnings

Sparge coming to an end and where's all the colour gone!

Ahh.. I see you'd slightly tweaked your recipe in the time I was trying to find that daft chart! It's a guidline of course just to make sure you're not making something that might risk being at the extremes of flavour.

Great set of pics - it's always good to get insight into someone elses rig and process and whilst I dare say that a great many people don't do things a lot differently it's always good to see another brewer in action! I particularly like your fly-sparge shower-bar affair, shows me I'm far too slow at doing mine and my runnings trickling out seems to take for ever.

I've a pump on its way so I'll try and mash thinner and pump re-circ some wort and pump fly sparge as soon as I get it rigged.

Yeah i do tweak as i go. Its a rare day when a recipe comes out the same at the end as when i start. Depends on the day and TBH whats lieing around close to hand and takes my fancy! Pumping to recirc the mash is a godsend, i used to do it by hand with a jug which was fine but there's a limit to how many jugs i can be arsed to stand waiting for! This wort recirced for 20 minutes before i set the tap, i continue to recirc as i sparge.

Big find of this month is whiskey barrel shavings intended for BBQ. They smell just like the storeroom in a distillery!Way more aromatic than the one's brupaks sell.I put 3oz of them in a tray, covered the tray to keep in as much of the aromatics as possible and baked them for 20minutes at 200 C to sterilise. The orange skin and finishing hops smell great and the honey went in in the last 5 minutes. It was all a bit frantic towards the end!

1.5 oz of amarillo and the same of simco in the nylon bag and the whiskey barrel shaving are in the other

Its all steeping closed lid for an hour. I'll turn the chiller on after that. Just realised that there's well over a pound of hops in this beer. I hope this gets me close to my ultimate hop beer. If not i'm going to give up and take up crocheting blankets or something.

Funny how sometimes the obvious things are staring you in the face. I've been thinking about recircing wort post boil through the hop bed in the copper for a while and realised today that all i had to do was cut a piece of plastic tubing and get on with it! The pictures speak for themselves on the success of this trial. Only ran it for 20 minutes at 4LPM. Will run for a full hour next time.

Very first Ltr, normally this would have been pumped straight into the FV and dropped out the bottom of the FV around day 2.
Image
After 5 minutes the difference is noticable
Image
After 10 minutes took a hydro sample at 1.058. Settled at 1.060 1 hour later.

CLose up of the wort during transfer to FV around about the 20 ltr mark.

Ended up with around 33 ltrs, will do the clean up tomorrow. Pitched 2 packets of US-05. A very enjoyable day!

Can I be 110% crystal clear about this.... (pardon my pun!)

Image

That pic above is post boil because you'd done a wort re-circ in your kettle during the steep phase.. and you'd yet to chill down? That clarity is remarkable.

Cheers guys,

It seemed like a logical step to use the hop bed as a filter but in a more active fashion than i have been. Can't say what temp the wort was at but i had been running the cooler for a while at that point. I'd say most of the heat had been knocked out by the time i took the hydrometer sample. I guess the test will be in 2 days time when i dump the first quarter litre out the bottom of the conical. Beyond this i'd have to go for 'proper' filtration and i don't fancy that at all....

I made it during a boring time offshore, works really well but strange feeling when stirring with it as it weighs nothing(aluminium) and cuts through the grain very well so there's no resistance really. Got to admit i don't think it would a long game to play 'guess pantsmachines favourite beer style'. It does get a bit mental though. Example being when i did the clean up this morning i took 1 and a half buckets of spent hops out of the copper. Even i'll admit that's not quite normal.
