HOPS TASTE SOUR HELP

Hello,
Can anyone tell me if the hop taste mellows with age in the bottle,
I have mashed & have reduced hop EBU rates from 30 to 20 because of hop bitterness but have only tasted the beer after being bottled for two weeks can you tell me will the hop taste mellow with age. I have no problem mashing and add gypsum to the dry goods and to the sparge water as well as CRS i LIVE IN THE SEVERN TRENT WATER AREA'

A sour taste is not a good sign, especially if it heads towards a vinegar taste/smell. If you mean bitter, then yes, both the hop taste and bitterness will mellow with age.
