Late brew day today, just about to mash this one... kind of a cross between a Vienna and an O-fest.

Haven't decided on hops yet, probably NB & Tett, I will have a few beers and see where it takes me.

Repitching some S-189.

Yeast pitched this morning, went with Magnum, NB & Tettnanger. Should be a good 'un!

Got a couple of kegs of pilsner to drink while this ferments, life is OK :D

Nice one mate, sounds fantastic :)

With lagers can you generally get away with stickin em in fridge overnight to cool down to pitching temp, then pitch the following morning?

S-189, not sure, jury is still out. I've got some pils which I will taste soon and get back to you. Initial hunch is I will stick with liquid lager yeast.

Dave, yeah no problem. As long as your sanitation is OK, I have never had a problem leaving it overnight. Definitely think the improvement pitching cool is worth the risk.

What are you chaps planning on brewing for the coming months? I'm thinking some stronger brown ales or a porter..

I am considering changing my APA to an American Brown Ale. Not 100% sure.

I was listening to some brown ale stuff on the brewing network and it sounded nice.

Im also going to get some brown malt and make a Porter before Christmas. Ever used it before?

I use 11% Brown Malt in this http://pdtnc.wordpress.com/2010/04/18/ag22-bramling-xb/ which was plenty, for me at least as a Brown Ale it is an acquired taste rather like Amber Malt and I'd probably stick with 5% if I used either of these malts again. Though I suppose with a good dose of Black or Chocolate Malt in a Porter it would keep the flavours in the background.
Worthy of another experiment :)

Finished uni which has meant temporarily moving home, only to find it impossible to find any sort of job, so have currently not brewed for about 4 months, and not looking to be moving out/brewing in the near future!

Sounds absolutely delicious. My infected batch was Vienna with Tett and it worked so well together, I think you're going to be impressed.

Beers for the colder coming months... Well I am thinking of doing a Dubbel, otherwise I'd love a bock of some sort but I want to try some more commercial examples before having a crack at it.

Like pdtnc says Brown malt is an acquired taste, I don't like it personally but i'm sure it is something I could grow to like if I experimented a little. I prefer caramel malts (darker ones) and a bit of chocolate malt and carafa. I tried the recipe for american brown ale from Brewing Classic Styles only I used Glacier hops and the British ale yeast from White Labs, and it was amazing I thought. Even though the Glacier hops were old. I'm going to try it again with some EKGs or Willamette.

Dave, good luck with the job hunt, it's tough out there! I am sure you can scrounge enough by selling some stuff on ebay to get enough for a sack of malt. I always used to buy a couple of sacks of malt in the lean times so that when I was skint I would always have a few kegs of bitter on hand !

Hey Bosium, try Anchor Bock if you get a chance, not like the German stuff but true to style and very tasty. Best bock I've had in a long time.

100% on that one matey, had it at the Leeds Beer Fest! Now if i could brew something like that I'd be happy! :D
