Guys, I'm interested in doing a foreign style beer for Christmas; Belgian, German, what-ever. Thing is, I don't have any means of cold fermenting of conditioning, so I need something I can brew & condition at normal ale temperatures and that uses relatively easily available ingredients & yeasts. Any ideas.

You could do a Belgian recipe with just about anything provided you use a proper Belgian Yeast like WLP500 etc

Belgians benefit usually from slightly higher temps than ale yeasts often starting at 18-20 and rising (may be fine if you have a warmish room you can use). I wouldn't go too overboard on the gravity if you want it for Xmas, and pitch a good healthy starter too to make sure the ferment is good.

Alternatively, you have the german ales you could try too (eg kolsch, alt).
