San Francisco Porter 23-11-10

Post by leedsbrew » Tue Nov 23, 2010 12:33 pm

Just about to mash in with a 5% Anchor Porter type beer!

going with

19L Batch

Fermentables
Ingredient Amount % MCU When
UK Pale Ale Malt - Marris Otter 3.099 kg 83.1 % 2.8 In Mash/Steeped
UK Chocolate Malt 0.229 kg 6.1 % 39.0 In Mash/Steeped
UK Medium Crystal 0.211 kg 5.7 % 4.8 In Mash/Steeped
UK Wheat Malt 0.105 kg 2.8 % 0.1 In Mash/Steeped
UK Black Malt 0.070 kg 1.9 % 14.3 In Mash/Steeped
UK Roasted Barley 0.017 kg 0.5 % 4.2 In Mash/Steeped

Hops
Variety Alpha Amount IBU Form When
German Northern Brewer 8.0 % 23 g 22.6 Loose Whole Hops 90 Min From End
US Cascade 7.0 % 13 g 10.3 Loose Whole Hops 60 Min From End
US Cascade 7.0 % 10 g 0.3 Loose Whole Hops 1 Min From End

Yeast
White Labs WLP051-California Ale V

:D

EDIT! Just checked and I've ran out of cascade so it's gonna be centennial instead! :D

Centennial = 11.9% AA so
8g 60 mins = 11.5 IBU
6g 1 mins = 0.4 IBU

No dark crystal?

no! The original clone recipe I found called for US 60L crystal so I went for medium! I've got a few kilos of dark so if this one seems like it's missing something i'll bang some in next time! :D

Not all that different...

76% Pale malt, 9% Munich, 4%Crystal, 4% black malt, 4%Choc

Hops: Northern brewer & cascade 90 mins bittering cascade @15mins to IBU43

Although looking at that the black malt looks abit high... (?)

There's a long thread over here with a recipe worked out with some feedback from one of Anchor's brewers. They use a lot of crystal -- he used 15% and the brewer said he could higher. His recipe is just down the page.

Yeah I get a heavy crystal flavour from Anchor, which is delicious. I figured it must be dark crystal they use.

In the northernbrewer thread they say it calls for 15% 40L crystal! Isn't that the equivalent of our light crystal? Would it just be the sheer amount that gives it the Heavy crystal flavour?

Yeah, makes sense.

I'm going to try the recipe I have and see how close it gets...
By which time you'll be drinking your LB and can give us the verdict!
I'm guessing that the Munich and regular (120) Crystal in mine would get a similar effect as loads of 40L Crystal ...?
:)
Only one way to find out though...
Cheers!

Sounds good, I'm thinking of my next stout using centennial.

it's a good call, I've done a 4SOS with centennial used to dry hop another beer. It worked a treat, and a nice bit of yorkshire thrift! :D

Hi LB!
Any further updates on this brew?

My hose and water butt (my cooling system) is frozen so no brewing for me until it all thaws... So I can only organise myself for the next few brews...

I check my stocks and I have 1 kilo of UK light crystal (which I think is about 80 EBC therefore ~40L ?) so I could go with some of that...
However I'm tempted to see how close the clone recipe I have is...

Interesting to see on the site that the link takes you to they only used NortherBrewer as the hops... I thought they did use a C hop... I think Sierra Navada porter uses cascade too (but again I could be misinformed)

:)

Cheers!
