AG#2 Beamishish ****new pic****

Post by simco999 » Tue Nov 23, 2010 2:33 pm

Strike waters on - I'm off work this week so time for AG#2 and AG#3 - firmly on the dark side now - no going back.

Trying a Beamish clone - fancied a change from lager. I've nicked Boingy's recipe (thank you) with some slight changes to the hops as I bought them after seeing a different recipe. Nary mind.

Beamishish Stout

3.0kg Pale MO
0.2kg Choc Malt
0.4kg Roast Barley
0.6kg Wheat Malt

25g Cascade 70 mins
25g Halletauer 70 mins

Pics (not too many) and outcome to follow.

First problem - tap seal on the boiler was leaking - glad I tested it first.

Trying to fix it now.

Doughed in - its a lovely colour.

Boiler fixed - just finishing the boil now.

About 30 kg of grain - that should keep me going!!

A cascade of black syrupy goodness. Yes - kitchen needs tidying - I'm single - so sue me!!!

Image

The spent grain - like a giant brownie.

Image

Spent hops.

Image

Well its the right colour.

Pitched a starter from a harvested yeast from my last brew. I've got some Muntons Gold as backup. Probably all wrong but there you go.

OG 1040. 23 litres brew length.

Looking forward to this one. It seemed a lot easier than my first AG.

Looking good, but I'm not sure I can take credit for the recipe. I mostly stole it from someone else.
Changing the hops in a stout is usually fine as long as you allow for the differing %AA.

I suppose we are all copying from someone - I liked the look of the one you did cos it was a bit simpler than others (and you know what you're doing). Being new to this I don't know what is good or bad - its a learning curve. All I know is my first AG tastes bloody good. Hopefully this one will too.

I'm drinking something very similar out of the barrell, and it's lovely. Anyone, including a local Microbrewer who have tasted it, have given it top marks. In the past, I would have put every roast and dark grain plus sugars in, which is fine if you want to leave it mellow for 6 months, but now I stick to the basic recipe of 70% pale, 20% wheat and 10% roasted barley, with about 200gm of chocolate malt, which I suppose is the basic Irish Stout recipe. I will experiment with this a little bit in the future, but not to the absurd extent that I was in the past.

Sounds good Taf.

I was a bit worried about the lack of activity in the FV - after 20 hours nowt - but its off and running now.

Will I ever tire of seeing a full FV - I think not.

You beauty.

Just out of the FV - this tastes lovely - some hints of Beamish but more like Guinness at the moment -I'm not kidding.

My first attempt at bottling with crown caps - very satisfying - with my mates 30 year old crown capper.

Very much looking forward to this one.

looks good. Beamish has that lovely star anise taste to it. Would the hops do this?

No idea - is there a hop expert in the house.

Well I'm very pleased with this - turned out ok - very quaffable. I'm no expert (apart from a 30 year drinking career) but I can say this would not be out of place in a real ale pub.
