AG#08 - Honey Orange Hefeweisen II

Post by Gricey » Sun Nov 28, 2010 1:34 pm

So the plan today is to brew the AG#04 again. It disappeared in record time, and as I'm out of beer following a party it will get me something to drink quickly.

Orange Honey Hefeweisen

Brew Length 21L

Grist
2500g Pilsner Malt (this time I have used Floor Malted Weyermann Pilsner malt from Rob@TheMaltMiller ... yum)
2000g Wheat Malt (Pale wheat malt this time)

Hops
18.13g Mount Hood 4.3%AA Leaf Hops @ 60m Boil

Additions
454g Orange Blossom Honey @0m
45.4g Golden Syrup @0m

Yeast
WLP300 Hefeweisen, 1L Starter from Wheat DME

Mash
67ºC, 60 mins
"General Purpose" Water profile

Batch Sparged

Ferment @ 18ºC

1 Cup Vodka & 4 Orange rinds (soaked for a week) strained into bottling bucket at bottling time

Target OG = 1.052
Target FG = 1.007
Target ABV = 5.9%

Actual OG = 1.047

Of course, did all the prep last night and my pipes are frozen. Hope this fixes itself in the next couple of hours or I'm gonna have to call it off :(

Bah. Pipes got unfrozen about 3pm, with the aid of a hairdryer :D

Mash is on now, forgot to chill down my starter though, so will end up pitching the whole lot, DME and all. Done it before, doesn't seem to do anything too bad. It's wheat DME anyway ;)

15 mins into the boil, noticed the hop filter on the kitchen table! Argh! Deadly transfer to FV then back again. I'll be done at 1am by this rate :D

LOL, you left this one a bit late. Saw your comment on my brew-day Yesterday, it was too cold really, the mash lost about 3 degrees, did you find that?

I had a freezing problem too, nightmare eh?!

I filter the hops by pouring the boiled wort into my FV with a mash-bag in it, works well IMO and aerates at the same time.. Why do you say it's "deadly"?

Deadly 'cause I picked up the boiler full of boiling wort and tipped it into the FV, attached the hop filter and tipped it back! Didn't want to drop that one :D

Dropped somewhere between half a degree and a degree and a half, depending on where I measured... I put it near the radiator though hoping that would protect it a bit!

Sat now waiting post chill, 20 mins to go or so before runoff to FV. Missed my OG by 5 points, didn't measure too well on this one (and didn't get a pre-boil SG), if I'd have done that I'd have boiled for longer. Not too fussed though, I know it will taste nice and I have a bit more wort than planned.

Ah, yeah the tipping lark is a bit of a scream eh?!

I've yet to measure the OG during sparging, I tend to go by colour and taste of the run-off. Probably not the best way to go but hey.

Good luck with this, sounds like it's gonna be a lovely Christmas warmer.

All done. Pics to follow.

Going to try and get a Saison in before Christmas as well, need to get stocked up after doing some strong (read: tying up the FV) ones.

Looks like you had a good brewday in the end despite a few hicups, mine didn`t go too well either as it was so cold outside in the shed
i didn`t really hang around at sparge time so ended up a few points down like yourself but it should still be a tasty beer, well hopefully,
may consider a batch sparge next time as you dont have to stand around waiting.

I was thinking of going to fly for the new build, never actually done it though. I guess you can do it unattended with a valentine's arm maybe?

Hi Gricey,

Like your digital thermometer, can you remember where you got it as I could do with one.

Thanks,

Kegman.

Got it from Maplin's - http://www.maplin.co.uk/Module.aspx?ModuleNo=36138 - I think people on here rate Thermometers Direct (online), I've never used them personally but I grabbed the Maplins one at the weekend after my glass one ended up all over the floor. Not sure I paid that much though!

Checked up on it, noisiest ferment so far for me this one - had a blowout at some point, tube has yeast in it. Boom! Still going, but not constantly like it was yesterday.

I pitched the yeast straight off the stir plate with starter, had been going for 72 hours so I guess it got stuck straight in :D

My 3-4 quid one probably isn't so accurate, not even that easy to read TBH! I shall invest :) Many thanks,
