Brewday 30/12/10 - Pale Ale with Styrian Bobek

Post by mysterio » Thu Dec 30, 2010 12:14 am

OK, after a couple of false starts and spending hours knocking 70 litres of ice out of my HLT, I can finally brew tomorrow...

I've heard some guys complain of soapy flavours with Bobek. I have only used them once and they seemed OK and very similar to the old Styrians but I would be very interested to hear from your experiences of using them heavily late in the copper, I might back off and replace with something else..

Looks good. I am mini mashing for my yeast starter tomorrow. No idea what to make.

Was it a late one??
That is a hefty amount of Bobek in the end!

Yeah it was pretty smooth, although my pump struggled getting all the wort out the kettle. Tossed in 4 packs of us-05 and fermenting it cool, 16c. Better clean out the mash tun now...

Does sound nice. That's quite a lot of crystal malt....however you've got a big wedge of hops at the end to balance it. Interesting.

It is pale crystal too, so the colour only came out as golden. US-05 really chews through all the sugar.

Just chilled this down ready for a secondary tomorrow. The flavour is like an unsweetened grapefruit/cranberry juice. Sour and slightly bitter.

I'll rack it on top of some Amarillo & Simcoe for a week then it will probably need a couple of weeks in the keg to calm down.

This is a problem because I don't have any beer stocks.

This has been in the keg for a week or two as well as a week on the dry hops.

I still don't like it, very sharp and sour. Like grapefruit pith. Bobek, trying them again now, are not how I remember old Styrian Goldings. The dry hops aren't really popping either, they have a bit of a wet dog/damp aroma in the background.

This was garden fertiliser today, it tasted pretty nasty. If it's not good now it probably never will be.

Yeah that's a shame Mysterio - I think Bobek is just a rank flavour hop. It's aroma isn't bad but I also poured the experiments I made using it for bittering and flavour down the sink. Definitely worth seeking out real Styrians if you wan't that delicous earthy / lemoney character imo.

I used to use old Styrian Goldings all the time and they are incredibly mellow and tasty. I seem to remember using Bobek once and thinking there was no difference, which is odd, because I know for sure they are completely different now. So can you still get fresh crop old school Styrian Goldings?

Well the last lot I got were from Hop and Grape - in pellet form as I used them for the 0-minute and dry hop additions on my IPA but they were pretty expensive when compared to TMM's prices. I think Brouwland also sell them?
I think I saw them on the-home-brew-shop a while back too, come to think of it.
