AG#6: Pilgrim Pale Ale [pics]

Based loosely on Fuller's Discovery recipe from BYOBRA.

Pale Malt 3245g
Crystal 120 170g
Wheat Malt 580g
Carapils 200g

Hops:
Liberty @3.5% 75g 75min
Saaz @3.8% 25g 10min
Saaz 25g/Liberty 25g steeped for 30mins at flameout.

Anticipated IBU ~ 26
Yeast: Safale S05 (yeah, i know it's boring)

Got about 21l @ 1.043 , which i then topped up to 23l.

Incredibly smooth brewday. Mash efficiency wasn't the best i've had, but that might be because i decided not to bother with my normal water treatment, so the pH may have been slightly off. I tried to mash at slightly higher temp than normal, because the last time i used US05 yeast it just kept on going and going and what i was left with was a bit 'thin'. Hence the carapils too. Too many variable to draw any conclusions, but what i got was good enough :)
Not used either of these hops before, so it's going to be an interesting one. I tasted the trial sample, but i find it really difficult to get past the sweetness to determine what else is there (especially as i burned my tongue on a scalding-hot cup of coffee this morning!) Will have to wait and see

had my first proper stuck fermentation with this one. pitched new yeast last friday and it seems to have picked up again. Moral of the tale might be to stick with the commercial/original packaging for yeast. tasted alright though ;)

Great pictures Monkeyboy. How is this one shaping up? Interested to know your thoughts on liberty hops

Fresh yeast woke things up, and it finished off at 1008 after a few more days.
i racked this into the barrel last friday night, so it'll be heading outside into the cold store (aka garage) soon. Had a quick taste when racking. Not sure what to make of it. Kind of a floral taste to it, mixed with a real earthiness. I never knew what that meant, but it instantly reminded me of the smell you get when digging over the veg patch in the garden. bit weird, but quite pleasant. I don't know whether that's the Liberty or Saaz, 'cos i've never used either before. I dry-hopped it with a load more saaz and some willamette so it might be difficult to attribute any particular taste/smell to any particular hop. Will post an update here once i've had another taster.

Not surer either. Never used either hop, but I do have a fresh pack of liberty that I'm wondering how to use. You're bound to get some dramatic changes over the next two weeks as always, so will be interesting to see what it's like once it's conditioned.
