AG#7: Stock Clearance. Everything must go (in)

In a few weeks time builders arrive to knock the back of the house down, along with the brewery (aka garage). This will be my last brew for a while, so i wanted to clear out as much of the odd n sods as i could. Hence the somewhat lengthy ingredient list. Got this done yesterday, and overnight it's gone bonkers. Say what you like about S04, but it's damn reliable.

Pale Malt 2000g
Wheat Malt 750g
Amber Malt 800g
Crystal 300g
Carapils 200g
Torrefied Wheat 200g
Choc Malt 125
Pale spraymalt 600g

10g Willamette & 80g Fuggle for 75mins,
20g Fuggle and 20g Saaz for last 10mins.

The spraymalt was a bonus - i'd forgotten i had it. So that got lobbed in too.

IBU approx 34, colour approx 80.
Yeast Safale S04

Everything went pretty well. Had a hell of a time getting the mash temp right cos i over compensated when bringing the temp down a little so it was a very wet mash, but after the boil got 23l at 1052, which is more or less my normal efficiency, so it must have worked out okay. That's definitely the most varied grain bill i've done - If i like it's gonna be a pain to reproduce! Had a little taste from the sample jar as before pitching the yeast. I find it really difficult to tell what it's gonna be like at this stage, but it was certainly malty ;)

Sad that i won't be brewing for a while, but the upside is that the new extension will have a better brewery as part of it. Even wifie refers to the garage as the brewery now :)

That is a fair amount of Amber, what percentage did it work out as?

Its good having an extension... I got all the services plumbed into the garage right from the start, I even have a easy possibility of adding a waste water outlet should I need to put a sink in there. here's ours https://picasaweb.google.com/1159838326 ... directlink

the amber worked out at about 16%. quite a lot. be interesting to see how it turns out. the sample i took just tasted really sweet and malty. might need a while for it to 'round' a little. Or it might be a total disaster...
the extension will be single story, wrapping around the back of the house, and yep, we're planning on putting services & waste into the garage while all the guys are here. Be glad when it's over ;)

damn. another stuck fermentation. two on the trot. stuck at 1020. rousing it made no difference. Pitched some fresh yeast to see if it will spark it into life. Was expecting it to be around 1013 so it's still got a way to go. Tastes alright though (but a bit sweet, as you'd expect)
Dunno what i'm doing wrong with yeast these days. Temp is around 18, so ought to be fine. Both the last two went off like a train but then just stopped.
