Cambridge JBK member Bishop's Brew-off

Well........the Cambridge JBK group have decided to repeat a brewing experiment (prompted by Jabba) by brewing the same beer within given guidelines to highlight differences in temp control, water treatment etc. Our last attempt was Worthington White Shield which was OK, but none of us thought the real thing was any good, so god knows why we brewed it! There was a lot to be learned from this experiment and the end results were very good and fairly similar, so we have decided to have a go at Oakham Ales Bishop's Farewell. There will be about seven of us brewing it, but if there are any other members out there that fancy having a go, the more the merrier! We will set a date and meet in Cambridge for a comparison test, but if you fancy having a go but can't make it to Cambridge, then I would be willing to exchange samples by post and take your sample to the meeting.

We loosely agreed the brewing guidelines at our last meeting, so here's what I've come up with:

Bishops Farewell.

OG, 1.046
IBU, 36
Grist, 92% Pale. 8% Wheat.
FWH, Challenger to around 20 IBU
Late hop, Cascade to achieve the final IBU.
Steep hop, Cascade. Any amount.
Dry hop, none.
Yeast WLP001



This is a fairly accurate recipe that I have used in the past as an example:

25 Litres.
Grist & OG as above.
33g Challenger FWH.
35g Cascade 15 min.
35g Cascade Flameout.

The variables are the Cascade additions, water treatment and fermentation temps.

If I have missed anything or if anyone wants to change something, post it up.

Nice one! Bishops Farewell is an excellent beer. Visiting family this week and the alehouse of choice has said tipple on as a regular :) Had a few on Saturday and will continue in a similar vein this Friday.

Might also be worth people clubbing together to get ingredients since they'll be the same? I know I'll need the grist, cascade hops and the WLP001.

I agree. Oakham keep churning out consistently good new beers, but this has to be the best in my view. Have one for me on Friday :D

Good idea Kevin, although I have everything I need the others might be interested.

Thanks Floyd. I know it's not the same, but I wouldn't mind doing it by post if you fancied having a go. The only disadvantage is that you only get to taste mine :(

I'm was going to order some bits for this early next week if anybody wants to add something from malt miller or do a joint order etc...?

Looks like Rob is out of WLP001 but is expecting to receive some fresh supplies soon.

Cheers jubby. It's more the idea of you all hooking up, sitting around a table and sharing your brews that I love. Maybe I should start something up down here...

I'm up fort he timing although I have worries getting my new shane inspired sparging technique tested in time, I've got the magnifying glass tweezers and spa water but finding virgins to do the actual hand sparging isn't proving easy - but if I can, just think of the purity levels I'll achieve

What's the thinking in getting 16 IBUs from the late addition rather than more from the FWH? Is it simply to get more of the cascade character into the beer? Not a bad thing at all, of course! :)
