Five Beers... (six now)
First brew of 2011! Starting with an easy initial recipe. Which gets more complex toward the back end. Starting early tomorrow.
FIVE BEERS
Brelength 25L OG 1039 Colour 35EBC
3kg Pale Ale Malt (marris)
1kg Amber Malt
0.5kg Torrefied Wheat
Northern Brewer 45g for 60 mins.
Yeast WLP 005 - depending on whether my starter is ok.
Once completed dry hop 5L in a demijon with different hops. Currently thinking Fuggles, Cascade, Saaz, EKG and Simcoe.
All bottled.

Well Mash tun heating up. Still debating with myself whether to go 5 or 6 beers.... 25L at 1039 or 30L at 1033.
I think I may go the later. So this should taste pretty mild in alcohol and sweetness, bar the hops being way out.

Wort tastes amazing. Sparging now. Went for a nice long 90-100min mash at 66C, and quite thin. Hopefully if the amber is too over powering at 22%, it will be calmed down by the amount of fermentable sugars.
Going for the 30L of 1033 SG, so added 50g of Northern brewer.

Well got 30L of around 1033. I think the over use of amber was justified in a beer with such a low SG and long brewlength. The wort was pretty drinkable, although the bitterness is punchy. I hope the majority of the bitterness hangs about through the fermentation. Using wlp005, which looking at the starter drops like a stone.
Had a few issues. Not very well practised at mo. Dropped my HLT half full of 80c steep water. Luckily its made of stern stuff and I only had a small puddle to mop up.
All in all a good day. Finishing it off with my lady and a few beers kindly donated to me by SLIMEEL whilst I deal with the drought

Good idea that is. If I had more Demijohns I would give something like that a bash.

Hydro reading at 30C. So I suppose is works out over my 1033 starting value.

Over 4 gallons of beer.

2 Gallons of beer. Torrified wheat doesn't half make a head, before and after fermentation.

Still going. Its doing well. Had a sample out of the fermenter. Very biscuity which should smooth out. Very bitter, which should smooth out too. Quite thin though, hopefully the dry hopping will give it an impression of body.
Not much yeast flavour considering that I allowed it to creep up to 24C during the start of fermentation. What is WLP005 meant to taste like? Is it as obvious as 005?

I don't beleive that it has a actual taste profile but, it is meant to produce a maltier beer.

Oh dear a maltier 1kg amber beer! Had a taste whilst moving everything to the secondaries, and its tasting nicer. Amber has calmed down. Bitterness is spot on. Roll on the hop aroma!sllimeel wrote:I don't beleive that it has a actual taste profile but, it is meant to produce a maltier beer.

Unfortunately smashed a demijohn, so have had to put 5 L in a 10L fermenting bin. I know, It will oxidise. But then it's only saaz, and I have done that one before. Worst case scenario I get 5 beers rather than 6.
