AG#53 - Kolsch Wit (pics added)

Kolsch Wit - Almost the malt bill of a Belgian Wit combined with Tettnang Hops and the Whitelabs Kolsch yeast. Should be very light, maybe cloudy, clean & Lager-esque.

Fermentables:
Lager Malt - 55%
Flaked Wheat- 30%
Flaked Rye - 10%
Munich Malt- 5%

Hops:
Tettnang - 4.2 % @ 60 mins - 50g (FWH)
Tettnang - 4.2 % @ 10 mins - 20g
Tettnang - 4.2 % @ 0 mins - 30g (20min Steep with the sting just knocked out of the boil with the IC)

Final Volume: 23 Litres
Original Gravity: 1.040
Final Gravity: 1.009
Alcohol Content: 4% ABV
Total Liquor: 32.9 Litres
Mash Liquor: 11.4 Litres
Mash Efficiency: 70 % (Reduced from my usual 80% due to having a lot of Flaked Adjuncts)
Bitterness: 26 EBU
Colour: 3 EBC

Whtelabs Kolsch yeast starter:

The usual FWH and first batch spargings:

I cooled to 16c before running to FV and pitching the yeast:

A little above my target of 1040:

The refractometer read 10.5 Brix (OG: 1040)
I Mashed for 2h 15mins and got 72% Mash efficiency, I pitched the Kolsch yeast while running to the fermenter at 16c, I shall be doing my best to keep the temperature under control in the garage. It might be time for some wet towels!

nice one man! Can't see the pics as I'm at work and the trust computers don't allow Flicker! nice recipe! that yeast is a cracker. great as a bottling strain

I'm just hoping that with wet towels I can keep the fermentation temp under control.
How were the States, Holiday... you have been away haven't you?

I'm just getting a thin layer of activity on the surface now.

How much do your flaked products work out at fom health shop? We have recently started using micronised foods in northalleton fo flaked and torrified productd

Tried and failed to get flaked wheat and flaked rye previously, but now I see the malt miller has flaked wheat. Where did you get the flaked rye from?

Flaked stuff from the Health Foods shop is just convenient, though more than double the price of TheMaltmiller.
Both the wheat & Rye came from the local health Food shop

The states were awesome thanks matey! Can't believe the amount of craft beer that is available in just about every supermarker, liquor store, 7/11 etc! And cheap as chips too. I had a sixer of Oaked Arrogant B@stard and it cost about £12. Sixer of SNPA or torpedo ipa was £4.80! :shock:

Although I did feel a bit 'cascaded' out by the time I got back! :shock: Nice to come back to my homebrew wich at the moment is mostley UK and continental hops! :D

I'm still holding onto my last Liquorice Stout for you, I kind of gave away my last Trashy Blonde (I shall have to make more).
You missed at cracking NCB doo at the brewery the other week, the boss had a good time and is up for a future event :)

Cheers man1 I've got a wit, dry stout, and a London Porter set aside for you. there was going to be a bottle of an IIPA but it's gonna need another 6 months to stop taking the enamel off your teeth1 it's a bit more bitter than I planned! lol :D

Gutted I missed the NCB but I'm glad the boss is up for more! I keep meaning to get along to have a butchers on a beer club night! :D

Will you be going to the huddersfield meet? I've go the day off so will be going, and brewing a pale for the comp! Looking forward to the Lancaster meet also, as my brother lives their so is going to be coming along. If it's in the Sun pub it will be a cracking day! :D

Yet another very early taster, Very very lager-esque, bottles clear as a bell even the bit of yeast that got in the glass was clumping, hopefully the carbonation will build a little more over the next week.
If brewed again I'd be a little more liberal with the priming sugars :)
