I've got a week off work and I've just realised I'm busy for the next three weekends so thought it was about time I did another beer. On Saturday I did an Apollo, Amarillo and Cascade amber ale to use up some of the hops taking up the top drawer of the freezer (on SWMBO's instructions) and so this morning I thought I'd carry on the good work and use up another 2 leftover packs and also try out Summit. I had a bit of a grain shortage so I've had to use Golden Promise and some pale crystal, I would have liked some Munich in too but I finished that off on Saturday without thinking.

Brew length 23 litres
OG 1.050
16 EBC
48 IBU

Grist:

Golden Promise 4600g 92%
Pale Crystal 400g 8%

Hops:

10g Summit 14.5%AA FWH
25g Summit 14.5%AA 10 minutes
30g Summit 14.5%AA 5 minutes
20g Apollo 19.5%AA 5 minutes
20g Centennial 10.4%AA 5 minutes
35g Summit 14.5%AA flameout
20g Apollo 19.5%AA flameout
20g Centennial 10.4%AA flameout

1/2 Protofloc tablet at 10 minutes

US 05 yeast

Mashed at 65C for 90 minutes, doing a 90 minute boil as I type. This is my first attempt at hop bursting so fingers crossed [-o<

Summit - ahhh. Pink Grapefruit bomb! :) Think the Centennial will compliment it very well, though never used Apollo.

I've only ever used Apollo for bittering, this is the first time I've used it for flavour/aroma but I've read here they have a citrus/tropical/resiny taste so I think they'll go quite well in this.

I lost a lot more wort to the hops than I had expected (I've not used this many hops before) and only ended up with 13 litres at 1.072 going into the FV before dilution when I was expecting to get 15 litres. I decided to dilute to the full 23 litres to give a weaker beer, OG 1.041, but this should be a nice refreshing summer beer at just over 4%. The wort tasted lovely, I'll sample it in a week or so when I keg it and report back. I'm expecting onions and garlic so that'll be nice :shock:

Sounds absolutely great. Only ever had them as single hops, but think Apollo and Summit will work well (and centennial just works in everything for me!).

Love the name as well. My absolute favourite band. Think you should get this in the keg quick... "I'm not waiting for you, I'm not waiting for you..."

Well it's been fermenting for a week now so I've just done a hydrometer sample. It's down to 1.008 so nearly there (AG#6, the one I brewed 4 days earlier with a similar grain profile and OG is now down to 1.005 and ready for kegging) and there's a definite onion/garlic taste going on in with the grapefruit - nice with a bit of mature cheddar but I'll certainly be leaving it for a while before getting stuck in. Does anyone know how long the onion stays around for?

It was more of a cheese and onion pasty/toastie kind of a thing. It would need some sort of Branstons hit to make a proper ploughmans and I have no idea what hops that would take!
