Slightly over shot the strike temp while watching the F1 qualifying so just waiting for it to cool a little.
Back on the little set up today.

0.5L starter of WLP300. Under pitching to try and stress some more esters and phenols from the yeast

Grist temp
Mash is now on at 67oC.

Looking very tasty - In my very limited poking around for wheat recipies recently I've seen a few with munich in but not Carahell before. So many possibilities - I really have to get my act together and have a go at one next week!

Yeah, I ran out of munich so thought I'd use a bit of the Weyermann malts I got recently!

Hope it turns out as good as my last Weiss

Had to laugh - this is like looking in a mirror.
Same Burco boiler, same mash tun and same thermometer as I use. Great minds?
I brewed today too - a Deuchars IPA that i'm calling 'Drew Brew' that i'm taking to my sister's wedding - Drew will be her new surname.

Nice brew LB.
Have you used wlp300 before, I plan for my next brew bar 1 to be a hefe and was going to use wlp300.
Interesting grain bill, but you kind of spoiled that by saying you ran out of Munich
I was planning on using 50% UK Munich in mine, to much?
Sorry if it appears I'm trying to hijack your thread

, just interested and you say your last hefe turned out well

Hey spud. Yeah i've used it on the past 3 hefes. Wouldn't use another yeast for one, absolute cracker. As for the grain bill, I knew I didn't have any munich so planned the brew around the Weyermann malts! The colour of the wort is awesome! Really honey orange/brown! It's right on the cusp of being out of style for colour but then I've never been one for brewing 'to style'.
I'm hoping with the cara malts and the high mash temp, along with the CaCl2 addition that I'm going to get some residual sweetness and a shed load of mouth feel. Add the fact that its 60% wheat and it should turn out a winner!
As for 50% munich, I like to use at least 60% wheat in my Weiss beers, but I see no problem in using munich for the other 40%. It's self converting so no probs there. Will be nice and malts. Add in some classic noble hops and the esters etc from the 300 and I reckon you'll be on to a winner!

Have you tried the WB-06 dried wheat yeast LB? I was sceptical but it's pretty good, tried it in a Wit.

I've used it in the last 2 Wits, and your right it really is good. I haven't tried it in a german style wheat beer as I have used WLP300 since the 1st, when I used danstar munich and it was gash! Kind of put me off dried yeast for hefe. Plus, when you can get WLp300, why use anything else. It defiantly is one of my favourite yeasts. I nailed a schneider weisse clone with it.

Yes, I think along exactly the same lines. I'll be keeping WB-06 for Wits, where theres some spices and other stuff going on, and keep the WLP300 for hefes.

well even with 0.5L in 22L of 1.047 wort it now has a foam on top and is glugging the air lock!

15 hour! I love this yeast!

Maybe a Dunkleweizen, or a weizenbock!

I wasn't sure at first, thought I'd used too high a percentage of crystal malts, but once carbonated and chilled! Man this is a great beer!
Lovely colour from the cara malts, the iPhone photo doesn't do it justice! Lovely golden almost orange. Total banana bomb.
Very happy!
