Broken Top Pale

Brew planned for tomorrow. I'm on a night shift tonight, gonna go home in the AM and get some kip. I should be getting the HLT on at about 15:00hrs.

Going for a late hopped west coast pale ale. The name is after an extinct volcano in the cascade mountains in Oregon.

23L
OG 1.049
FG 1.011
Ap Att 75.9%
ABV 5.0%
IBU 40.3
BU:GU 0.82

60 min mash @ 66oC with mash out at 77oC

Lager malt 70%
Carapils 15%
Carahell 10%
Wheat malt 5%

25g Cascade (4.5%) 15 min 5.9 IBU
25g Simcoe (13%) 15 min 16.9 IBU
25g Citra (13.4%) 15 min 17.5 IBU

25g Cascade (4.5%) 0 min
25g Simcoe (13%) 0 min
25g Citra (13.4%) 0 min

10g Cascade (4.5%) dry hop
10g Simcoe (13%) dry hop
10g Citra (13.4%) dry hop

1.5L starter of WLP060 American ale Blend

Water to be treated as per 'pale ale'

I'm hoping for massive arroma on this one, and a nice clean malt backbone with a little residual sweetness from the cara malts.

the yeast blend is (apparently) wlp001 Cal ale, wlp051 Cal V, and wlp810 SF lager. having used all of these I'm hoping for the cleanness of the Cal ale, the extra body that you get with wlp051, and slight lager notes from the 810. From the reviews I have read on t' net I should get all of these! We'll see :D

Any way, any comments most welcome as I won't be getting it on till tomorrow afternoon.

You missed a Zero out on your dry Hopping, should read 100g for at least the Cascade ;)

haha! I might have a rake around the freezer to see what ods and sods I have in the way of US hops to chuck in as well! :D

mash is almost done. got the camera out so pics to follow! :D

malt bill changed a bit as I've ran out of carahell so it turned into 1kg of carapils with the difference being made up with lager malt.

Wow, this is going to be one pale ale! I think I was counting on the little bit of carahell to bring a bit of colour but hey ho, it wasn't to be!

80oC steep hops are in now so going to be chilling and pitching soon! Really hoping for a nice smooth bitterness and loads of hop forward aromas/flavours! :D

Very well thanks mate. One of those smooth, chilled out brewdays. Collected 22L and it's chugging away nicely this am. I recon it'll need to go into the fermenting fridge today as it's glib to be another hot one! :D

You brewing this weekend?

Not this week, fermenters full, one to put in my newly bought 20L water carrier (Polypin) and another to bottle.
I have ideas and some parts for a Dry-Hopping device so will be making a new fermenter with inlet and outlet.

Garden hedge needs trimming etc :)

Never enough fermenting space! :D DH device sounds interesting! Bit like a torpedo type affair?

well this has reached FG now, slowed up towards the end. I'm going to rack to secondary tomorrow and add the dry hops

Citra, Cascade, Simcoe 15g of each

leave for a week and then bottle.

A wee taste of the gravity sample this AM and it is tasting very good! :D
