AG#58 - Trial Brew

Trial Brew of something for work, so photos only... rather than Recipe.

Final Volume: 23 Litres
Original Gravity: 1.060
Final Gravity: 1.016
Alcohol Content: 5.7% ABV
Total Liquor: 31.9 Litres
Mash Liquor: 13.9 Litres
Mash Efficiency: 80 %
Bitterness: 25 EBU
Colour: 122 EBC

I make this 1056, 4 points low, I only got 75% Mash efficiency today which might be because it was the last in the sack of Pale Malt:

Can I ask what salts you are using there?

Also if we guess the right malt bill do we get a few bottles?

Salts are the usual liquor treatments, calcium sulphate, calcium chloride, magnesium sulphate, calcium carbonate, common salt into the boil.

The calcium carbonate is what I am interested in. How much? And do you do anything to help it dissolve in to the liquor/mash? I take it that if you don't add it you drop below the required carbonate to act as a buffer and your pH will drop.... what is the issue of this if it does occur in a dark beer? Hope you don't mind me picking your brains.

I don't mind, I have no brains to pick... I only go by the Graham Wheeler Water treatment calculator and know nothing other regarding liquor salts.
I have very soft water out of the tap so I can do whatever I like to it without AMS (Carbonate reducing solution), and further experience of testing my mash pH has told me that whatever i do do to my salt additions I'm always going to be near as damn it to the right pH.

Well, not as far as the giant golf balls. But yes, pretty much on that road. I think I fall just inside BB home delivery service.

A beer swap is definitely on the cards
