I seem to be getting more and more cold break whilst brewing, is this good or bad?

Assuming you are a new brewer.....you are probably just relaxing a little and giving things some time, coupled with noticing more and improved method.................all sounds good to me  :D

Look at it this way, the more break material you leave in your boiler, the less gets into your fermenter. Some people don't care about that, but I like the idea that there's less to settle out :)
