Growling Motty IPA 24/07/2011 - piccies added

Post by GrowlingDogBeer » Sat Jul 23, 2011 4:57 pm

Brewday tomorrow, getting myself organised, recipe is ready, yeast is on the go.

Growling Motty IPA
Target 45 Litres

Original Gravity (OG): 1.052 (°P): 12.9
Colour (SRM): 10.0 (EBC): 19.7
Bitterness (IBU): 48.5 (Average)

8Kg Maris Otter Malt
750g Caramalt
500g Munich I
500g Torrified Wheat
200g Dark Crystal

50 g Motueka (8.4% Alpha) @ 60 Minutes
50 g Motueka (8.4% Alpha) @ 30 Minutes
50 g Motueka (8.4% Alpha) @ 10 Minutes
50 g Motueka (8.4% Alpha) @ Flame Out

Single step Infusion at 66°C for 60 Minutes. Boil for 60 Minutes

Split into 2 fermenters for comparison

Fermenter 1 at 20°C with Brewlabs Thames Valley 3 (my first ever liquid yeast brew).
Fermenter 2 at 20°C with US - 05

Got the yeast starter going late last night and it's gone off like a rocket.

A couple of new toys to play with, I get to use my refractometer for the first time on a brewday, and I finally use some liquid yeast. I've never had Motueka before so am looking forward to this one.

Looks good. What sort of flavours does the "motty" give you?

Fair enough!

Still haven't got round to building my mash tun yet. Waiting for a full free weekend day. Waiting.

This sounds fantastic Steve.

I've only ever used Motueka in an extract brew but it is absolutely gorgeous, it's citrusy with a more restrained tropical fruit note than Citra, it's given my brew lots of lime zestiness to it which I'm loving, very nice indeed and most definitely a hop I'd use again for one of my all grain brews.

Never used it myself but a friend did some nice hoppy red ales last year. One with Nelson Sauvin and Motueka, the other with Nelson and Riwaka. Both turned out gorgeous. Still not used to many NZ hops yet. Need to clear my freezer full of hops so I can buy some...

Well brew day started later than planned so only just got finished.

I got the Mash on eventually at 1 pm.

Small change to the recipe, when I got the Hops out of the Freezer I noticed they were 13.8 AA, not the 8.4 I had thought they were and planned the recipe for. Glad I noticed or that may have ended up a little bitter for my taste. New IBU 48.2

New hop schedule

25 g Motueka (13.8% Alpha) @ 60 Minutes
25 g Motueka (13.8% Alpha) @ 30 Minutes
25 g Motueka (13.8% Alpha) @ 10 Minutes
25 g Motueka (13.8% Alpha) @ 5 Minutes
50 g Motueka (13.8% Alpha) @ 1 Minutes
50 g Motueka (13.8% Alpha) @ Flame Out

Heres the obligatory Grain Shot

Image

Mash underway, hit 66.5C this week underletting which is almost spot on, happy with that.

The pH looks good too.

Image

Time to get all these hops weighed out and ready for boil time

Image

First Wort Hops are in and the sparge is well underway

Image

Must be time for a beer, which one to have, decisions decisions. I really must get some better labels sorted out

Image

So, its the Weisse beer for me today

Image

Boil complete and cooled down I think it's about 1.052, nice colour too.

Image

Fermenters tucked up in their fridges, this one has US-05

Image

And this one has the Thames Valley 3

Image

Finally all cleaned up, nice shiny Mash Tun

Image

And the boiler all clean again

Image

All went well today, refractometer worked a treat during the sparge, and tied up with the hydrometer reading at the end. The Motueka smelt good, looking forward to this one.

Just been and checked on the fermenting, not that I normally do but I was rearranging the fridges so had to take the fermenters out temporarily anyway.

The US-05 one has about a 2 inch Krausen as normal.

The BrewLabs Thames Valley 3 liquid yeast has about an 8 inch Krausen and smells fantastic, glad I have plenty of headroom in my fermenters.

Bit behind on my duties so only just read this thread - all looking very good, as always!

I've never used Motueka either, sounds very interesting. I'd also be keen to hear how the yeast compare; i've been getting into the liquid ones as well recently - so far US-05 is holding its own for IPAs, especially when repitching slurry, but i've not tried the Thames Valley.

cheers

Gary
I plan on bottling a few of the Thames Valley ones so it would be good for a swap. I saw your motueka brew and then realised I had some in the freezer which is what inspired me.

Kev
I've not really got into liquid yeast yet. Dennis King gave me this one, I'll see how it turns out.

I don't know yet, been too busy to do anything with it, it's still sitting in the fermenters.

I will have to go and have a look later, just to make sure it's all OK.
