AG#67 Bière de Garde - 15/04/12 + pics

Managed to get another post sprog brewday in yesterday. A Bière de Garde. The recipe was inspired by the great 'Farmhouse Ales' book.

All in all a chilled out day. No pics as the little one needed seeing to and we had Mr and Mrs pdtnc round for a bit.
Currently bubbling away nicely!

both really good reads, and full of inspirational ideas! Such as using a lager strain at slightly elevated temps for Bière de Garde!
The idea is that to get restrained fruitiness and higher than average attenuation. Plus the fact that a lot of small farmhouse breweries would have got their yeast from local large breweries who would have been using lager stains!

The grist and the inspiration behind this brew. Great read and full of ideas.

Nice low mash temp. The idea is to get a great malty beer that isn't cloying. Mashing low should help to maintain balance between a high OG beer and relatively low IBU's.

The run off. not many photos in between as pdtnc and myself were 'sampling' past brews!

Really happy with the colour. nice copper colour (as it's practically the same colour as the 15mm tube!

Again, great dark copper. Perfect for the style!

The filth. Not nearly as compact as the abbey amber the other day. must use the re-circulation pump more!

is it your 1st time with the Mauribrew Lager 497, if not is it very clean / don't bring anything to the party? I'm using it in my latest brew ( ROCKET-SMIFF ) but at a higher 19 temp ferment and just hope its yeast flavor free as I wish to understand my Grain and hop make up.

lol! aramis and 497! looks like we were on the same brewing page this weekend!
Yeah it's the 1st time i've used it! I've read it can handle that type of temp and still be a good lager strain. I'm not too bothered if it's neutral as Re: Bière de Gardes get lagered (garded) anyway. I'll be garding this for about 4 weekds at 1oC

Looking good there, should be a nice one for the summer. Have you used the Maurbrew yeast much?

That's the plan! No first time with the mauribrew! I'd read that it is quite forgiving regarding temp and off flavours do thought it would be great for a biére de garde!

So a pretty volatile fermentation is now over!
it has gone down to 1.013/1.014 ish so an attenuation of 75 ish % and an ABV of 6.1-6.2 ish. I was hoping for a bit more, and I have not checked the FG since warming the room up for a D rest so it might have creeped down a bit further! the plan is to rack to secondary then bang it in the fridge at 1oC for 4 weeks lagering before re-seeding with the primary strain and bottle conditioning!

Excellent thread. I have GW's "European Beers" book and am planning to brew the Biere De Garde in there. Let us know how this one turns out. I plan to use the Jenlain yeast WLP072 French Ale, when it comes back into stock!

Cheers matey! Ill defo be getting a tube of that as well and see how it compares to a lager strain!
How different is the recipe from that book?
