Right, on my normal brewing timeline, this would be approaching sampling time! It's been 8 days now, so it would have been bottle for 3 or 4 days. It started fermenting as normal and when I checked it after 3 days it was at 1022. unfortunately that's where it's stayed for 4 days. Remember this was even more random than my usual brew days............old malt, old yeast, thermometer failed etc I may even have mashed this at 75C for all I know. I will let it sit for a while yet (yes I've done the usual stuck restart stuff) and see how it goes.

It's not such a big issue. It will still be about 4% and is pretty hoppy so that will perhaps balance the residual sweetness. I will just think of it as a dessert beer. That's what wine buffs call their sweet stuff, isn't it?
