Smoked Honey Porter - Great Pics!

I love the sound of a smoked honey porter and have decided that I need to be sipping several over Xmas. Following on from advice here: viewtopic.php?f=5&t=53943 I knocked this up yesterday. My good friend took pics using his Fujifilm Finepix X100. £700 worth of kit! He loves photography the way I love brewing. We both love BEER!

Danstar Windsor is the yeast of choice due to its low attenuating character. I mashed at 69c and I'm hoping this finishes up at around the 1.020 mark before adding the honey next week. The honey will drag down more gravity points whilst leaving the sweet maltiness intact... well, that's the plan anyway :shock:

I'm hoping that this beer finished up at around 8%.

Brew day went well. Here's the beer in its current state. Will add the honey next week.

Nice pics there Floyd! Very handy having a photographer come round to document the brew for you.

How did you find the smell of the Rauchmalt then? Did you have an overwhelming craving for bacon? I've just started brewing another smoked Dunkelweizen but I failed to heed my own advice - the house is devoid of bacon :shock: As soon as the first decoction's done I'm off to the shop to remedy this sorry state of affairs :D

I thought I had some too,but didn't! :-( A very strange and interesting thing happened this morning though. My missus woke up with a serious craving for a bacon sandwich. Must have been something in the air... :-)

Already fermenting like a mother f*cker. Room is 17c too which is great as I don't want this yeast throwing up esters. Wee bit nervous about this one to be honest. I hope it will taste as good as it sounds!

Another nice looking recipe there Floyd and cracking pics. I hope it turns out well and that the Windsor yeast does the business for you.

What software do you use? I like the simple look of that recipe on the screenshot you posted...

BeerTools is right. Have never used anything other than this program. Check it out. You'll get a 30 day free trial. Cost me £20 4 years ago. Updates are free and happen every few months.

Can you believe... this is at 1.018 already! I'm really hoping it doesn't drop much lower. Lots of spewing out the airlock yesterday and through the night. Will let it sit until Friday then add the honey.

Oh... and it's tasting very promising. That smokiness is amazing! Not offensive at all. Let's hope that doesn't weaken too much. Seems like a perfect amount as is.

I do have one concern though: Bitterness. It's only around 34IBU. Had planned for it to be around the 40 mark, but the efficiency was so high, I made a few litres more and forgot to up the original hops quantity. I'm hoping the roasted barley and chocolate malt will have added some bitterness too. Any ideas?

Excellent looking brewday there Floyd, as others have said Awesome pics too! Well intrigued about how the windsor works out for you. Would be well up for another beer swap when this one's ready! :D
