Sunshine

Taken from M.Ollosson's Real ales for the home brewer.

Brew length 46 ltr, recipe scaled to 80% efficiency

In the tun

7.26kg Marris Otter pale malt
370g Wheat Malt

Mash temp 65 deg c, Mash time 90 mins, mash liquor 22 ltrs

In the boiler

Bramling Cross hops 121.4g AA 5.8% (90 mins)
Bramling Cross hops 39g (last 15 minutes)
Protafloc 10g (last 15 minutes)

Boil time 90 mins

Target OG 1036
Target FG 1008
Alc cont 3.6%
Target IBU 40
Original recipe target IBU 28

Game on....I will fill my corny's...and soon 8) :shock:

Brew on :pink:

Mash finnish 0750 8)

Have already done some stuff differently with this brew.

I used a HLT liquor temp of 73 deg c to transfer to the mash tun.
This gave me a strike temp of 65 deg c in the tun. By the time I'd doughed in the mash temp was 60 deg c.
Started the recirc and within 5 minutes was at the required 65 deg c :wink: so I took this point as mash start.

I'm upping the aroma hops to 100g from 39g :!:

Reading the dark Styrian post of J_P Garth got a gr8 result by upping his aroma hops from 12g to 45g

SD advocated an extra ounce or 2 of aroma hops (28g - 56g)

So I think I settled in the mid ground.....ish :?

Would you be concerned :?:

Hope its going well - my jaw always drops when I see these whopper quantities. Delayed reactions then as I realise a 10 galloner ( I know some girls described as that :lol: )

Vossi you could Dry hop your beer instead of using large amounts at 15 min hops & they won't get scrubbed by fermentation.For best results i like to add to the end of fermentation & leave beer warm for three days before crash cooling

In the end I bottled it and went for 50g aroma hops. Still more than planned but not as brave as I should have been.
I will definately be looking into hopping in the cask, just need the courage to do it :?
Everything went perfectly, then 'she that has no name' got up and everything went wrong.
Firstly it took me 1hr and 20 min to get the brew to 23 deg c :shock:
Secondly, during the cooling, the volume in the tun dropped a ltr from 53 ltr to 52.....so I topped it up. Half an hour later it had dropped another 3 ltrs :shock: . I looked for leaks, none were to be found so stupidly I attributed the loss to the cooling process and topped it up :?
I then looked back as the temp hit pitching, and the volume was 50 ltrs again :shock: :x
I sat there for about 2 minutes and then...oh yes...and then I thought it must be the sight tube. I blew back through the top of the sight tube and a couple of bubbles came through the wort and the volume shot up to 55 ltr....target was 53 :evil: :evil:
I then watched as the volume dropped again to 50 ltr, I again blew back and it shot up to 55 ltr :x

Can anyone explain this...reverse capillary action :?: There were no hops in the sight tube as the opening is only 3/8" and it seems to magically stop hops getting in, however the hops had blocked the opening to the tube :shock:
End result was an OG of 1035.2, target was 1036 which really annoys me.
This bloody inadequate pump is really screwing my cooling times up.
The recirced wort was 16 deg c but because the flow was sl slow it didn't stand a chance :cry:

Surely your not implying I will have tried this brew by then....well maybe...then again :oops: :lol:

Brewing again tomorrow, so I'll be modest ti'll I can sample the results of this brew :wink:

I do fancy dry hopping though and I'll be trawling the database before hand 8)

Not a bad thing wez :wink:

I've just sampled the IPA I did 5 days ago. I upped the aroma hops by 84% and the result is my best yet 8) aroma and taste wise :wink:

On this brew I upped the aroma hops 92 % 8)

I think I've found roughly where my aroma hops need to be, thanks to SD's advice :wink:

EDIT

I've got 10 corny's to fill and 120 ltrs waiting...that only leaves 2 brew days including tomorrow to fill them....by which time I think my SS will be gone so that's one more brew day and I'll be done for summer 8)

Yep...but then again I wouldn't descibe it as heavily hopped as SNPA, which on draught is my all time fav :wink:
