Postal Strike Ruins Brewday - Ideas Needed

Post by Wez » Fri Jul 13, 2007 6:18 pm

Well the postal strike has meant that my plan to brew Pop's stout tomorrow is out of the window  it'll have to wait a couple of weeks till I have another chance :(

I am still going to brew something tomorrow and thought i'd post what ingredients I have available to see if you guys can suggest an alternate brew. I'd like to do something around the 1050 - 1060 OG mark.

6 or 7 KG Pale Malt (MO)
500g Crystal Malt
250g Amber Malt
250g Flaked Barley
130g Torrified Wheat

100g Northdown (6.5)
130g Styrian Goldings (3.0)
100g Challenger (6.8)

I do also have 500g Chc Malt and 500g black malt put would prefer to hang onto them for Pops stout, may be able to use 100g of each though.

What do you guys think I should do?

How Do Wez - Bloody trot postmen!

I'd personally have a bash at Orkney's Dark Island as per Marc Olloson's book.

4150g pale malt
150g Chocolate malt
150g Crystal Malt
150g Torrified Wheat

44g (6.2%) Challenger - 90mins
294g White Sugar - after 45 mins
6g Challenger - 15 mins

90 min mash 65C 90 min boil

If it turns out like the original it'll be a winner

You could brew a whole load of things with that! :D

How about a powerful hoppy bitter?

6.35KG pale, add 125g of crystal malt. Bitter with Challenger to 40 EBU. Add 50g of Styrians at switch off. It will be nice :)

Depending on your extraction and brewhouse efficiency you should get 24L in
your FV within the OG range you mention

74% brewhouse efficiency will give around OG1058

I did one recently with the same grain bill but using fuggles and goldings and batch sparged. It's very very nice. Nottingham took it down to 1009 so it's very drinkable for the gravity, but blows your socks off at 6.4% abv. Danger beer! :D

 you see.....now I have an option....i'm not good with options. I feel a coin toss coming on. Or....I let the forum decide :D

Please could you post what you think I should brew:

Vote either:

A : Orkneys
B : Powerful Hoppy Bitter

I'll brew the one with the most votes posted by 10pm tonight. If it's a draw i'm shafted and i'll just toss a coin

Oh by the way don't give me any more options....

It's not dark. Quite pale, in fact.

A - Proven results from a good book

B - Maybe the confidence booster you need that sets you off on the path of designing your own ales :?

I'd go for A :D cause I'm chicken :P

It'd be stupid of me not to vote for A therefore I vote A ! I think I'll be brewing this one next weekend, either that or brewing some sort of imperial stout to lay away for christmas (sorry for using the C word).

I have a mate coming round to experience the delights of AG brewing and have said he can take away half of what we brew provided we don't drink too much in the process! We are both fans of Dark Island so it seems a good place to start.

I implore folks to dare to be different and get Wez to brew a dark ale in July!

Edit: It's a 23l brew Wez you may need to up the malt to get to 1050 as it's OG is 1045 alternatively I'd stick with the recipe as it's (the original) a well balanced ale

Another 'A' vote here Wez.

I just hope Dark Island is on again at the GBBF next month. Its the only time I get to drink it from the cask!

Chickens!! I'm the other way around. I've brewed maybe five or six brews to published recipes. The other sixty or so have been mine...ALL mine :)

There's nothing that beats doing an AG brew that turns out good and your friends applaud you....apart from when they ask "what is it?" and you say "one of mine" ;)

B, naturally. ;)

This Dark Island recipe......6g at 15 minutes?? What for!! It's a drop in the ocean. Can't be for aroma or flavour - 15 mins will boil that off. If you're gonna make a late addition - at least make it count!!
