AG#5 - Marie Celeste - Ghost Ship Clone

Yesterday was my brew day for a Ghost Ship Clone...

Shout out to Ovenhiker for recipe...


-Marie Celeste-

OG: 1.046
FG: 1.010
ABV: 4.8%
IBU : 36
EBC: 16

4.5kg - MO Pale malt
0.25kg - Caramalt
0.25kg - Crystal Rye Malt 5%
----------
15g - Chinook - 60mins
30g - Amarillo -10mins
45g - Citra - 1min
----------
55g Citra dry hop

Adnams yeast recovered from a 5l mini cask - first 1.5l starter I did came ready a couple of days ago but had to put off brew day so made another from the second 5ltr mini keg - it was only 600mil but is fine as 12hrs after pitching it's coming through the airlock!!. Mind you it was a bit of a squeeze with 25ltrs in the SSBrewBucket.

All went to plan, in-fact even better! Hit all numbers spot on, ....which isn't usual !! and was still at 1.013 at the end of sparge and also collected 29ltrs pre boil. Beersmith said I had a 90% mash efficiency =D> Mashed @64.9 and after 90mins was 64.9!!!

End Sparge 1.13 - tick!
29ltrs into boiler - Tick Tick!
PreBoil 1.038 - tick!
End Boil 1.46 - tick
Into FV 25l - Tick Tick!


Only problem I can envisage is ferment temp as I haven't got a fridge... YET! Crashing is going to be a toughie. Fingers crossed it's OK.

Very nice....ghost ship is a fine pint, hope it comes close. What's that groovy looking fermentation v?

It sure smells like Ghost ship at the moment and still have the dry hop to go so hopefully a repeater brew.... the 10ltrs from the 2 mini casks I just had were fab!

My first bit of shiny.... a tad expensive but hey... don't tell SWMBO [-X

Check their website.. http://www.ssbrewtech.com they have some great 'stuff' and The Malt Miller is their UK agent :)

I enjoy Ghost ship clones similar to this, although I use "Motueka" rather than Amarillo. Confusingly listed on the Adnams ingredient list as Mantueka, but hey it from NZ. I've done one batch with recovered Adnams yeast from mini kegs but now use Notty, and last batch us-05 There is a commercially available "Southwold" Yeast must try that.

How do the Notty/S-05 versions compare? Adnams won't deliver the mini casks to Northern Ireland so I've no chance of recovering the yeast.

Had thought of a Windsor/Notty blend but not sure if this is anything close.

To be honest couldn't really tell the difference.

Just put a GS clone using Neals - Malt Miller West Coast Yeast.

Yes with the Adnams yeast a blow off tube is needed not a lock.

I was referring more to the US-05/Notty versions compared with the Adnams yeast version?

The Adnams yeast, went off like a rocket, compared with the Notty, but both finished at more or less the same gravity. And both seemed neutral. Not much in it, I don't think in a blind tasting I could tell the difference. The hops in a Ghostship are to the fore.

Yep, it should be Motueka in the middle, rather than Amarillo.

Word is that WLP025 is only a single strain, but may be one of the two strains in Adnams yeast.
