Brewday - 25/08/2007 - "Who dares wins"
Brewday - 25/08/2007 - "Who dares wins"
Evening Chaps
The following brew is pencilled in for tomorrow.
4.10kg Pale Malt
0.35kg Crystal Malt
0.20Kg Torrified Wheat
10g Challenger @ 90 Mins ~6 IBU
10g Challenger @ 60 Mins ~6 IBU
10g Challenger @ 30 Mins ~4.5 IBU
10g Challenger @ 15 Mins ~3 IBU
10g Challenger @ 10 Mins ~2 IBU
10g Challenger @ 5 Mins ~1 IBU
10g Challenger @ 0 Mins
The hop levels may look low however I have found that between 20 and 25 IBU's using my kit gives me beer with similar bitterness to the pub pints I like to drink (standard beer).
Can anyone see a problem with the hop additions?
Fermentation duties will be taken care of by 2 packs of Danstar Nottingham started in 1 litre of boiled, cooled and unhopped wort.
Any suggestions on a name?

Re: Proposed Brewday - 25/08/2007
Im guessing, call it a hunch that you may like the taste of challenger, since its obviously a hop you like it might be worth experimenting and lose the early hop additions and get virtually all the IBUs from a 15 or 20 min addition.J_P wrote:Evening Chaps

Its a leap of faith but if you like hop flavour and aroma its the way to go (warning it won't taste like the pub stuff, it'll be much more floral and fragrant). It was mysterio that convinced me to give this a try and although i wouldn't do it for all my brews it does give stunning results.
The proposed brewday is on. I appear to have made a recovery from a suspected case of sunstroke. Needless to say I'll be brewing in the shade today!
Del that's exactly what I'm after, I may have to take you up on that suggestion, I had an IPA in Stockport that tasted really floral and punchy and I'm hoping to emulate that. I had a challenger only beer imaginatively called "challenger" the other month at a beer festival and I also like Coniston Bluebird so I figured I'd give one of my own a go!

Have a good one J_P, hope it goes smoothly for you. Sure it will
Sorry I can't come up with any witty names for your brew
why don't you see what happens today and name it after a mini event or the like, just like I did with my Legless frog.
If I were brewing today so far I'd be calling it "Mardy 3 Year Old Won't Get Dressed Just Wants To Do Frickin Jigsaws"

You're getting your threads mixed up there Wez, this should be in the "I remember when..." thread. Kids doing jigsaws, now there's a quaint old fashioned thing! Hats off to you and Mrs WezWez wrote:Mardy 3 Year Old Won't Get Dressed Just Wants To Do Frickin Jigsaws"

Anyhoo I've just scrubbed up my gear and am about to get the mash water on.
JP if you throw the whole 70g of hops in with 15 mins to go (assuming this is a 1050 brew) you'll get about 20 IBU from them, if you throw them in with 20 mins to go it'll be more like 25 IBUs.
If you do decide to do it make sure you have a good boil going cause that many hops will kill it for a while.
What ever you decide to do have a good one

Many of the guys over here have been doing that, mainly with their IPA's.....they call it "Hopbursting" and it supposedly gives extremely good results for flavor and aroma.....delboy

EDIT HAVE A GOOD BREWDAY

Delboy and Dartgod appear to have stumbled across a name "HopBurst"dartgod wrote:Many of the guys over here have been doing that, mainly with their IPA's.....they call it "Hopbursting" and it supposedly gives extremely good results for flavor and aroma.....

The mash is on and I'm going to monkey around with my hop calcs and see if I can come up with something that fits the bill, I suppose I'll have to take some pictures at some point too!
As long as the lid's off your brewpot while you boil you shouldn't have any problems as long as your sanitation is good.....
Description: Tastes and smells of cooked vegetables/corn/cabbage or shellfish/seafood. Is acceptable in light lagers to a degree.
Cause: Bacterial infection can cause DMS, as well as covering up your brewpot during the boil. DMS is removed from the wort during the boil, so covering it up is obviously going to cause the DMS-laced condensation to fall back into your brewpot.
Remedy: Keep good sanitation procedures, and make sure to keep a rolling, uncovered boil when brewing. Do not cover your brewpot during the boil!

Mr Malty recently posted an article on late hopping for big hop flavour - an interesting read.

Take the leap of faith and get all the IBUs from just one single addition 70-80g of in the last 15 mins will still give you aroma (it won't all have boiled away trust me).J_P wrote:55g Challenger @ 20 Mins ~19.5 IBU

Would this give me sufficient hop punch in the brew without risking DMS encroaching on the flavour?
