EP90 Chocolate Stout - 46L - 28.8.07

EP90 Chocolate Stout - 46L(10gal) 1.061 - AGXIX

First outing for the new 57L mash tun, stretching my brewery to capacity (well the boiler at least.) The recipe is based on POP's excellent stout and named after an engine oil.

Grain Bill - 46L 75%eff' 1.061
10kg Pale Malt
2.0kg Flaked Barley
1.5kg crystal malt
1.0kg Roasted Barley
0.7kg Black Malt
0.7kg Chocolate Malt

Hop Schedule
60min - 180g Fuggles 4.5%AA

Mash - 1hr
In the boiler I've heated ~40L (roughly 2.5L/kg) to 77.6oc & pumped using the little totton pump to dough in by hand, the tap on the outflow is very handy & I don't think i'd have been able to mix all of this without the boat paddle. Pre-heated the tun with 2L boiling and doughed in the grist (grain) a few kg at a time to ensure no dry spots. Strike temp'- 66.5oc

The mash tun is fitted with a pretty standard 22mm slotted manifold. I chose to cut the pipe with a wheel cutter (the kind that leaves smooth ends) and squash the ends of the pipe in a vice so that it makes a tight fit in the brass elbows. The sparge arm is 22mm soldered.

Now onto the sparge. I collect the wort in my fermenters and tonight due to lack of time I'll keep it overnight & finish the brew tomorrow.

Nice pictures,does chocolate stout have any chocolate taste to it ?.I would have thought you would have to add some sort of proper chocolate :roll: .

Mash finished @ 65oc after 1hr
I heated about 45L of sparge water to 80oc and collected 55-60L of wort over a good 45minutes on the fly sparge. Of course all this won't fit into a 50L boiler so the plan is to boil the hot break for about 45L then top up once the froth has died down and turn the boil down to a simmer before adding the hops. I'll top up with the extra wort as I go along if necessary. What a great colour (there is so much dark malt in there.) Smells darn fine too. I can't believe how smoothly this brew has gone so far.

P.S. DRB the stout has a really rich flavour, I can see why it's referred to as chocolate even though it's got no cocoa in it. Puts Guinness in the shade.

Great work Frothy.

This is my next brew in a couple of weeks.
There's so many variations on the recipe I'm not sure which one to go with although I like yours at 1.061 OG. 8)
Should have good keeping properties.

Well the boil didn't go quite so smoothly. The burner is powerful enough to produce a fierce boil and I managed to beat back the hot break and top the boiler up to a safe 35L, however I ended up boiling for 90min to fit 45L progressively into the boil. I'd collected 57.5L of wort pre-boil and so ended up boiling the remaining 12.5L with the spent hops and distributing this evenly between the 2 fermenters (to maintain a consistent IBU & OG.)

Final result - >50L @1.060. That's probably my best efficiency to date as it's over my predicted 75%.

Final hop schedule 50IBU (bit's and bobs really)
60min - 125g Challenger (5.6%) - 32.1IBU
60min - 58g Goldings (5.1%) - 13.57IBU
60min - 16g Bramling Cross (5.7%) - 4.2IBU

Pitched a sachet of S-04 into each fermenter and away we go :)
