AG#38 Galaxian Pale Ale

Planning a brewday for tomorrow. First one in three months. Also first time using Galaxy hops so any thoughts on the hop schedule are welcome. Plan is to use lots of late hops for flavour and aroma with a 50g dry hop. Yeast should be 3rd Gen WY1728 if the starter takes off. Reclaimed some from a polypin of AG#36 brewed in May. If that fails I have some Neale's West Coast Yeast on the way from the Malt Miller.

More so that galaxy is one of my favourite hops!

Galaxy is lovely!

I'd consider just adding the bittering hops and moving everything else to a c.20 min whirlpool/hop steep. I got considerably more bitterness than I thought doing that with Citra in my last IPA. Then dry hop on top!

Brewday went okay today apart from forgetting to put the sparge water on to heat (again), which meant the mash got extended to 2hrs 25 mins. I said in my original post that this was my first time using Galaxy hops. Not exactly true as I have dry hopped with them and re-used the dry (wet) hops in my next brew. However, this is my first all Galaxy beer.
OG was 1.045 at 23.8C, so near enough 1.046 @ 20C.
Yeast starter pitched and now the waiting game begins. (Starter was prepared a la Yeastwhisperer method without a stirplate and was showing a strong krausen at pitching).

Took a gravity reading today and it has fermented out to 1.006 after 7 days. I think a combination of a healthy yeast pitch (possible overpitch) and slightly high fermentation temperature has led to almost 87% apparent attenuation.
Brewfridge is definitely on the cards to control fermentation. Been scouring Gumtree for cheap fridges.
Sample tasted good though. Definitely more bitter than the calculated EBUs. Dry hops (50g) going in in next day or two.

Dry hops went in yesterday on day 10. 50g of sticky resinous Galaxy. :D
Hope to bottle on Thursday or Friday.

Bottled this yesterday. Got 44 bottles. Forgot to take FG, but don't think it will have gone much lower than the 1.006 it was at last week, hopefully. Smells great, very tropical fruit type smells. Fermentation temperature was a bit on the high side so hoping there won't be too much in the way of off flavours. Perhaps the Galaxy hops will mask them if there are any.

I've brewed quite a few galaxy beers over the last few years and I found it improves with age. If bottling try to leave 3 months, it's worth it.

3 months! Be lucky if I hold off 3 weeks, but seriously I do like to try my beers at various stages of conditioning. It will be interesting to see how it develops over time.

If you can leave some it should be worth it. I have found galaxy can be a bit harsh when young. Even after 2 months it will be more mellow.
