Bells Two Hearted

I used to brew this one in Aus and it was absolutely delicious - although I must admit I have never tasted the original.

Mash In Add 25.89 l of water at 71.4 C 67.2 C 60 min

Sparge: Batch sparge with 2 steps (Drain mash tun , 12.00l) of 75.6 C water
Notes:

Mash went great with new PID, and new grist ratio @ 4l per kg. Really ran smoothly with good throughput and nowhere near a stuck mash. Downside, perhaps, is a much smaller batch sparge vol (12l) but mash efficiency was actually OK @ 80%. I had issues with water volumes that I have described elsewhere, and ended up with 33l instead of 31 in the boil.
Water vol issues meant a higher volume at the end as well (about 27l) and correspondingly lower SG @ 1.055. Never mind - I did consider adding some DME but decided against it, as the beer should still be fine. Perhaps even more drinkable at mid 5's % than nudging 7 (after bottling).

One bummer is that I managed to leave an airlock (bubbler) in the fermentor when I filled it (had been sanitising it and left in there until required). I *think* it should be pretty sanitary. Let's hope so..

Pitched a 1.8l starter of WLP090 (San Diego super yeast) to 18C wort. First time with this one, quite excited to see what its like.

Looks a nice recipe.....very similar grist to Epic pale ale.....hop schedule is similar too swapping centennial for the cascasde.
It is amazing the complexity you can create with just one hop.
Hope it turns out well for you.

Could you please tell me which PID you used Matt ?
I use an Auber SYL2352. Seems decent enough when it works, but my first one crapped itself after about 4 years. Having said that, it had been in storage in probably sub-optimal conditions for quite a while of that.. Auber do have a good reputation but there are many cheaper on ebay (with substantially less postage to pay, as the Auber comes from the US). I'd probably try one of them if I was starting over in the UK.

Brew update: going hard at 18.5C with the WLP090!

Are you using a PID with an induction heater?

No - I use the PID for a HERMS rig during mash only, then boil on induction. I'm not sure you can use a PID on induction (my one, anyway). I've got a suspicion that the burner won't come back on if left set to "on" after a power outage, as a safety thing. I could be wrong though - I think I just read it somewhere (haven't tried it).
