I brewed this yesterday. three gallons, O G 1,058 (about 1.068 after candi syrup added), IBUs 33
4 lbs. Irish malting company stout malt
1 lb. Blackprinz malt
1 lb. flaked barley
8 ozs. British crystal 60
8 ozs. lactose powder
4 ozs. midnight wheat malt
mashed at 154f for 45 minutes
1 lb. tart cherry candi syrup to be added after primary fermentation is mostly over
1 oz. WGV @ 6,4% for 45 minutes
pinch irish moss plus 1/4 tsp. nutrient for 15 minutes
1 pack Munton's plus
1 pack K-97
yeast pitched at 12:40 pm at 63f. There were signs of fermentation by bedtime at 10 pm and was bubbling every three seconds at 7am the next morning.

I added the tart cherry candi syrup yesterday at 2pm. The burps in the airlock were one every 27 seconds. By 9pm they were back up to one every four seconds and are still at 4 seconds per burp this morning.

Here's the list of ingredients on the tart cherry candi syrup: pure cane sugar, water, tart cherries, natural cherry flavor, and mahlab seeds. If the ingredients of this stuff is close it might work.

The beer gods must hate me. I was about to bottle this batch when I shoved the bottling bucket to the side and misjudged where I set it: 51% hanging over the edge and it took a dive off the counter spilling the entire three gallons all over the floor. All I could do was go, " No! NO! NO!!"
Upset doesn't even begin to describe the feeling.
When my wife realized what happened she ran in with a armload of towels. It took a couple of hours to clean it all up and there is still a load in the washing machine. After it was all taken care of she told me to go and get the ingredients to remake the batch and to pay for it with household money. She is a keeper, 28 years and counting.
#$%^^%$$%^&&&*####**&^%$%$%$$#%^^&&^^, sorry about that, but I needed to get it off my chest.

you have my sympathy. That is a double nightmare. First losing the batch so close to getting it in bottle, and second the hours of cleanup...!
Two plus points@:
Great response from your wife.
It wasn't hot wort.

I'm sore today (physically and emotionally), but I didn't get hurt and my wife's extreme anguish for me helped lessen the blow quite a bit.
