RECIPE: JBK WeeBee

Quantities shown are for making 23l or 5 imp gallons.

Pale Malt 4300g - 87.4%
Dingemans Special B - 500g - 10.2%
Torrefied Wheat 120g - 2.5%

CHINOOK hops (quantities shown are for 13% aa)

35g for 60 mins - 47 IBUs
25g for 20 mins - 20 IBUs
20g for 10 mins - 10 IBUs
20g at flame out - 0 IBUs

OG 1.048, FG 1.010, ABV 4.9% (@ 75% brewhouse efficiency)

IBUs = 77

Colour - 56 EBCs

Your choice of yeast, but this Works well with Nottingham/Gervin

kicking this one off early..

never used special B before but a munch on the grain beforehand certainly showed all those dark fruit/raisin characters i've been told to expect. also can't keep my nose out of the chinook pack. keep going back for "just one more lug". i can picture this one already..

10L in the cube, got to rescue some yeast from under another brew. fuller's or conan.. ?

not a lot to show as far as pictures go. wonderful as the BM10 is, she's not a lot to look at. my hacked together, use anything in reach, safe only under the supervision of professionals 3V setup is far more interesting..
still, she's a friendly brewbuddy..

Just brewed this today as well, 27L in the fermenter. The special B did smell amazing and really curious to see how this melds with the Chinook and base malt, it did seem to be great at the entering the fermenter stage.

Is this like a super-hoppy hop-bomb, this beer? I'm thinking of doing it this weekend but I'm wondering whether to dial back the hops a bit. I don't mind an occasional pint of Old Hop-Monster but five gallons is rather a lot ...

I'm off to a good start so far (if you don't count waking half the street up at quarter past six by forgetting to switch the alarm off before going downstairs :roll: ).

Hit spot on 67C for the mash.

I have the water heating in the HLT at the moment. I'm thinking I might do a 40l batch.

Just mashed in and hit the strike temperature nicely. My final quantities for a 40l brew were:

Pale Malt: 7500g
Special B: 870g
Terrified Wheat: 210g

Scary stuff that terrified wheat eh ;-) Spell checkers, don't you just love them.

What you doing for a hop stand for the flameout additions before chilling? or not?

I should add that I am posting from my beer shack PC now :) I found that the wifi setup I had wasn't sufficiently reliable, so I've done a bit of fiddling about with the network and made things work rather better.

The "terrified wheat" was a deliberate misspelling on my part :D

It's my usual practice to allow the boiler to "settle" for about 15 minutes after switching it off before draining off the wort. I'll probably put the flame-out hops in when I turn it off and do exactly the same.

Now in the middle of the sparge. I'm sparging into 25l brewing buckets, so I've emptied some into the boiler and got it started then I'll top it up. The Chinook hops do smell absolutely fantastic so I'm really looking forward to seeing how this turns out.

All done for today. Post-boil volume looks to be very close to 40l or about 9 gallons. I'm going no-chill on this one, so I'll get it in the fermentation cabinet in the morning. Have to clean the boiler in the morning too as it's too hot right now.

Transferred mine to the fermenter this morning and pitched the yeast. OG came in at 1052 in the end, so perhaps I did a little better with the efficiency. The hydrometer sample tasted very promising, too.
