AG #66 American IPA

After reading a couple of brewdays on extensively hopped IPA's i thought i'd join in, although i didn't want a full batch so the BM has been left on the bench and i reverted to how i did my first all grain. Saying that if it turns out really good i can scale it up allthe way to 50L :twisted:
Loosely following a recipe for 60 Minute IPA i came up with the following. Falconers Flight was chosen as its a IPA hop blend so will hopefully work well, and the recipe is scaled to use the whole pack up. Also when hopping every 5 mins its easier dealing with just one pack. I added a little sugar to dry it out (more of a english thing than american but i couldn't help myself), also when using mangrove jacks west coast yeast before i found that it finishes a little dryer than US05. The Acid malt i add to every brew to help reduce alkalinity.

American IPA
Target Gravity: 1.075
Batch size: 9L
Bitterness: 94 IBU

Grains
2600g Low Colour Pale malt
75g Acid Malt
75g Amber Malt
100g Golden syrup

Mash Schedule
Mash in 7L @ 66C for 1 hour
Batch Sparge1 6 @76C

Hop Schedule
1.00 gm Falconers Flight (60 min) (First Wort Hop) 2.6 IBU
2.00 gm Falconers Flight (60 min) 4.8 IBU
2.00 gm Falconers Flight (55 min) 4.7 IBU
2.00 gm Falconers Flight (50 min) 4.6 IBU
4.00 gm Falconers Flight (45 min) 8.8 IBU
4.00 gm Falconers Flight (40 min) 8.4 IBU
4.00 gm Falconers Flight (35 min) 7.9 IBU
6.00 gm Falconers Flight (30 min) 11.0 IBU
6.00 gm Falconers Flight (25 min) 10.0 IBU
6.00 gm Falconers Flight (20 min) 8.7 IBU
9.00 gm Falconers Flight (15 min) 10.7 IBU
9.00 gm Falconers Flight (10 min) 7.8 IBU
9.00 gm Falconers Flight (5 min) 4.3 IBU
18.00 gm Falconers Flight (0 min) (Aroma Hop-Steep) Hops
18.00 gm Falconers Flight (Dry Hop 3 days)

Water Treatment
1/4 Camden Tablet
5ml CRS
2.2g Gypsum

Yeast
Mangrove Jacks West Coast M44
Fement @ 18C

Ingredients all set up:

Warming strike water. Using the temp controller just as a thermometer:

Mashing in. Mash was a bit thin and it turns out i used 1L too much when i noticed the sparge water was short.

Mash done. I heated it to 76C before sparging. Although i was aiming for a 66C mash it was more of a range between 64 - 68. As the temp dropped i applied gentle heat to bring it back up again.

Re-circulating the wort to try and clear a little. The mash was emptied into a bucket with a mashing and sparge bag.

After cooling gave it a stir to try and keep the hops in the middle to siphon off the edge:

It soon settled and at fortunately there are no photos of the chaos as i disturbed everything with the siphon and ended up trying to sieve out the hops. I hate siphons.

Eventually i got a little under the target 9L. I used a 2 gal pressure parrel for the fermenter and tucked it away in my temp controlled fridge at 18C

Target gravity also a little short at 1.072.

Next morning looks like fermentation is underway.

Turns out i'm a but rusty brewing like this but it was fun to go back to how i started. Its easy to think a small batch with simple equipment would be quicker and easier but it takes just as long a bigger batch, not matter how i've brews either like this, 3 vessel setup or the BM it always takes me all day to brew and then clear up.

Interested to hear how you like the Falconer's flight. I've been tempted a few times, but still keen on using individual hops to get an idea of how they work. It is supposed to be a very nice blend.

A quick update on this one, fermentation has been very vigourus and has already fermented down to 1.016. I put the dry hops in yeasterday and will give them a few days before crash cooling and bottling next week.

How was your lag time?
I used this yeast for the first time in a pilsner ale last month and it took way longer to start than S-05.
The beer came out great.
I'm just here for the beer.

A couple of years ago I had a strong hoppy wheat ale with F Fs that was pretty good.
I'm just here for the beer.

I've found the lag time no less than any other dried yeast. I pitched on the brewday and there was clear activity when i checked the day after. But both times i've used it i have pitched more than what would be the usual 1 pack in 23L wort. This beer i pitched the full 10g pack in 8.5L of 1.72 wort and when i did a 30L batch of 1.048 red ale i pitched 2 packs. Both beer have turned out drier than what i would have expected S-05 to finish at, as per the homebrew shops advice. The Red ale turned out really good so i thought i's use it in this beer too.
